Ingredients

  • 1 pound fresh green beans
  • Olive oil
  • Salt and pepper
  • Bacon

Directions

Preheat oven to 350 degrees F.

Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

    I am not a fan of green beans at all. I can take them or leave them and most of the time I have left them. However, I used... frozen green beans and infused my olive oil with fresh garlic and did not even get to the salt and pepper. BUT, when I tell you they were good, please believe they were good. I put about 8 green beans or so in each bundle. I am now trying to figure out who I can make these bundles of joy for.Read more

    Everyone I've made this for steals the recipe. It's that good. I like it better with the thick cut bacon personally - or the... kind with the pepper on it. Of course, it's not healthy, so I only make them once in a blue moon. Make sure you blanch the beans and then cook them on the slotted baking tray like the recipe says and not a flat tray. You need the fat to drain to crisp the bacon. I cook it longer than it says too and broil for a few minutes at the end to crisp it even more. I think sea salt and fresh ground pepper and good olive oil make a difference too.Read more

    Loved these. But. Boiled for 5 minutes. Oven temp 400. Cooked 20 minutes. Put under broiler for a couple of minutes to... finish off. Bacon was good ....but since I try to cut on a very fatty dish. I put the bacon to the side. Beans are the greatest. The few minutes under the broiler make them seem as if from the grill and have that slightly char flavor. Put the unused bacon in baggie and lay over turkey and ham when baking to keep them from drying out. Enjoy this lovely and different recipe. Hope the changes help the lady with the bacon problem... You could microwave the bacon a little to get it started so that it will become crispier while in the oven. Nloticed changes were similar to another lady......probably another southern cook. Love that pork.Read more

    These were horrible completely inedible. What was Paula thinking? Took other reviewers advice and cooked the beans... longer, total of 30 minutes in the oven, and they were still not done. I know it was not the beans as I had cooked some the night before for myself the old fashioned boiled way and they were delicious. Will never make this again.Read more
