Ingredients

  • 1 pound fresh green beans
  • Olive oil
  • Salt and pepper
  • Bacon

Directions

Preheat oven to 350 degrees F.

Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

    These green beans were awesome! I made them for Thanksgiving yesterday with my husband doing the bundling. He wanted me to... use a thick cut bacon, but if you do they have to cook longer (30 minutes) and people who don't like softer bacon (vs crispy) might not care for the actual bacon. Even after cooking for 30 minutes, the beans were still cooked, but still crisp. These were a huge hit!Read more

    These are so easy to make. I first made them for a dinner party and expected to have left overs.... no way.... everyone had... two or three bundles. Now Im making them for thanksgiving. And just to be safe i got 2 pound of green beans this time. I hope that will be enough!Read more

    Thanks Paula Deen! This was the first time my boyfriend or I had ever tried making a dish mixing bacon with green beans. The... result was elegent and delicious - not the healthiest veggie side but with a less fatty main dish it creates a good balance in my opinion. The recipe itself was very simple to make.     I am not a fan of green beans at all. I can take them or leave them and most of the time I have left them. However, I used... frozen green beans and infused my olive oil with fresh garlic and did not even get to the salt and pepper. BUT, when I tell you they were good, please believe they were good. I put about 8 green beans or so in each bundle. I am now trying to figure out who I can make these bundles of joy for.Read more

    Everyone I've made this for steals the recipe. It's that good. I like it better with the thick cut bacon personally - or the... kind with the pepper on it. Of course, it's not healthy, so I only make them once in a blue moon. Make sure you blanch the beans and then cook them on the slotted baking tray like the recipe says and not a flat tray. You need the fat to drain to crisp the bacon. I cook it longer than it says too and broil for a few minutes at the end to crisp it even more. I think sea salt and fresh ground pepper and good olive oil make a difference too.Read more
