Ingredients

  • 1 pound fresh green beans
  • Olive oil
  • Salt and pepper
  • Bacon

Directions

Preheat oven to 350 degrees F.

Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

    I've made a different version of this, make some adjustments. I make the bundles then microwave them for about 3 min. Then drizzle Balsamic Vinnegar over them & BROIL, turning periodically. I secure the bundles with toothpick broken in half so they can be turned to broil all over.

    I made this for Thanksgiving and it was the HIT of the dinner! Since then I have made this for numerous holiday dinners and dinner guests. I love love this recipe!

    Great recipe, I loved the green beans but cooking them in 18 minutes is a total joke. I had my oven turned up to 400 and it still took 30 minutes. I think the problem is the green bean to bacon ratio. If I make this recipe again, I will use thinner bacon or twice the number of green beans and definitely allow more time for cooking.

    An alternative to this recipe is to mix 3/4 cups of brown sugar with 2 Tablespoons of soy sauce and pour over bacon/green beans before cooking. It's also very yummy.
