You can create up to five timers

Ingredients

  • Nonstick cooking spray
  • 6 eggs, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon cayenne pepper sauce
  • 3 (4-ounce) cans diced green chiles, with juice
  • 1 1/2 cups grated Monterey Jack
  • 1 1/2 cups grated sharp Cheddar

Directions

Preheat the oven to 300 degrees F.

Spray a 12 by 8-inch baking dish with cooking spray.

In a bowl, add the eggs, salt, pepper and cayenne pepper sauce. Mix together well.

Add the chiles and both cheeses to a large bowl. Pour the liquid ingredients into the cheese mixture and stir well. Pat the mixture down into the prepared baking dish and bake until the center is firm, about 45 minutes. Allow to cool, then cut into small squares and serve.

    Delicious! I have already made several times. This time around I added some chopped green onion and dash of garlic powder and chopped up some fresh parsley. delicious snack, or side dish. Thanks, Paula :

    I am always looking for new ways to enjoy Hatch chiles and so I had to try this recipe! We used them as toppers for grilled hamburgers--with all the cheese and chiles, it made a great nibble while cooking and then a really nice treat sitting on the hamburgers. I think I could increase the cheese and the chiles--the egg mixture could carry a lot more of these or other flavors as well.

    On point! Absolutely Delicious! Due to amount of eggs used, I think it would be appropriate for the breakfast menu. Next time, I will add bacon and serve for breakfast with toast!
