    Excellent!

    I found the bread to be done a little nicer if, before assembling the sandwich, you first brown - with a small amount of butter - the side of the bread which will eventually be smothered in mayo.

    You have to preheat the pan anyways, so it's only a small additional step. Makes the sandwich just a bit crispier!

    This is one amazing sandwich. I made it with sourdough bread like you did on your broadcast. I roasted the onions in the cast iron pan I made the bacon in. I removed most of the bacon grease and added some olive oil...YUMMY !! Next time however, my husband and I have decided we will swap out the mayo for some peanut butter....Let me know what you think of that one Paula!!

    I had this sandwich at a posh hospital I was at through work, I loved it. I had to look up the recipe for the sandwich and sauce (red onion mayo. This was very easy to make, the prep was not bad especially considering I used my Henkel santoku knife to cut everything. I dont have a food processor so it took a little bit of time (3-5 min. The time it took only build up to the moment that I put it together and we tasted it. My wife was surprised at just how good it was, she was apprehensive but left the table very fulfilled. I though it was just as good as the posh hospital cafe I had been at, this will be done as appetizers for our next get together. Mild cheddar, center cut bacon, sourdough bread, red onion sauce, and butter= Wonderful.

    I made this exactly as the recipe says, I sliced my apples on my mandolin to make sure they were nice and thin. I wasn't sure how I was going to like the apples on this sandwich but it was so good!

    I've not made the sandwich part YET, but I made the Roasted Red Onion Mayo and it is to DIE FOR after chilling in the fridge for a couple of hours! I made a sandwich out of some Boar's Head ham and an Onion Poppy Ciabatta sandwich roll, with a slice of American cheese, slathered with this Mayo recipe. This Mayo recipe is also great as a dip!...I had some Pretzel Crisps and tried them with this, which is ALSO to die for! YUM YUM YUM! A must try!

    This was a wonderful sandwich. We loved it so much, that we had it again the second night. What a great way to kick off the summer. The roasted red onion mayo really made this sandwich work!!!

    I cooked my bacon in the oven, poured off most of the fat and used the remainder to roast the onions. This recipe is amazing but the roasted onion mayo is the real star of the show. Be sure to use a cheddar that will melt well.
