    I saw her make this sandwich the other day and thought I had to make it myself. The combination of the salty, smokey bacon, with the tartness from the apple is amazing. The roasted red onion mayo really sets it off. I will be making this sandwich many more times to come.

    Rather than butter the bread the way Paula does, I like to toast the bread in the bacon fat instead. Tastes great and beats waiting for the butter to come to room temp to spread.

    I've made this sandwich several times now, improvising here and there, but the BEST version was from following the original recipe. I think what I made today is the best ever -- sourdough bread, 2 slices of thick sliced apple-wood smoked bacon, the red onion mayonnaise, high qualited aged white cheddar cheese, and about 2/3 of a granny smith apple. I don't think I put on the same amounts as the recipe called for...I just couldn't eat that much!! As it is, this makes up a 5" x 7" sandwich and I ate 1/4 of it. It's HUGE! AND OMG SO GOOD!! I wrapped the other half of it in foil and dashed it over to my daughter who was working down the street from here, and she was speechless at how good it was. The other 1/4th I am saving for dinner tonight. Ladies, if you want to impress the men with minimal effort? This is the one... (I didn't care for the sandwich when I used plain ol' cheddar...its gotta be sharp...and ya gotta use granny smiths....

    This sandwich was delicious! I loved the combination of flavors - everything worked so well together! I made it for lunch for guests and then made myself another one for dinner, so you know it had to be good! I made the red onion mayo the night before - it has such a wonderful flavor and will be delicious on other things as well. This is a keeper - thanks, Paula!

    this sandwich is amazing. everyone loved it! don't even consider making it without the red onion mayo - it was practically effortless and it tied everything together. HIGHLY RECOMMENDED!

    Oh wow, this is a keeper. Just forget about all the bad stuff in it and relish every bite. We didn't really notice the taste of the apple, so next time I'll slice it a little thicker. But there will definitely be a next time!!

    We loved this! We weren't sure how the apple was going to fit in with the other flavors, but it was wonderful! I made the recipe as is - including the onion mayo - and we thought it was great!

    This sandwich is absolutely delicious. I made the mayo a day in advance. Like others have said, the mayo really makes the sandwich, and it's so easy to make! So don't skip this step! Also, don't be stingy with the mayo when you're putting it on the sandwich... it is truly a delicious spread.

    I don't eat pork, so I used turkey bacon from Trader Joe's and it was very, very tasty. Once the mayo's made, this is such a quick and easy sandwich to throw together any time! And it uses ingredients that I always have on hand.

    Five stars any day!
