Ingredients

  • 2 tablespoons plus 1/3 cup butter, softened
  • One 10-ounce package angel hair coleslaw
  • 1 tablespoon distilled white vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar, optional
  • 1/4 teaspoon ground black pepper
  • 8 slices marble rye bread
  • Thousand Island salad dressing
  • 3/4 pound thinly sliced deli turkey
  • 4 slices Swiss cheese

Directions

Preheat a nonstick skillet over medium heat.

In a large skillet, melt 2 tablespoons butter over medium heat. Add the coleslaw, vinegar, salt, sugar and pepper. Cook until the coleslaw is wilted, stirring frequently, 5 minutes.

Spread each slice of the marble rye with Thousand Island dressing. Layer the turkey evenly over half of the bread slices; top each with 1 slice Swiss cheese. Spoon the coleslaw mixture evenly over the cheese. Cover with the remaining bread slices, dressing-side down. Spread softened butter over the bottom and top slices of each sandwich. Grill the sandwiches until golden brown, 4 to 5 minutes per side. Serve immediately.

    This is my favorite reuben! I don't like a sweet reuben so I would use saurkraut already prepared (the kind in a package or the packaged cabbage without the sugar added if using store bought cabbage slaw and just adding salt and white vinegar drained and a little real mayonnise - no Russian dressing. Then i would wrap it in aluminum foil and bake it in the oven with all the other ingredients and melt it in the oven until the cheese is melted. It also taste excellent with pumpernickel bread as well.

    It was good, but not fantastic. If I make it again i will add more seasonings to it. It needed a little more flavor or a kick.

    Ummm... Soooo yummy! Made this for dinner this evening. Very quick and easy. Of course, I can never leave a recipe alone without doing somethin to it. I used bacon grease instead of butter - why, you ask? Because I could : Added some thinly sliced red onion in with my angel hair coleslaw,used white wine vinegar and added alittle sprinklin of caraway seeds. Made homemade Thousand Island dressing by mixing about 1/2 c. light mayo (Hellman's, about an 1/8 c. ketchup (Hunt's, some diced spicy sweet pickles (Wickles and alittle sprinkle of salt and pepper. Served it all up with some extra pickle slices on the side and a few Cape Cod Specialty Kettle Chips... roasted garlic and red pepper. So good ya'll!
