Ingredients
- 1 1/2 pounds ground beef
- 1 cup cracker crumbs
- 1 egg, beaten
- 1/4 cup lemon juice
- 1 cup grated cheese
- 1/2 cup chopped green pepper
- 2 teaspoons Lady's House Seasoning, recipe follows
- 4 medium red potatoes, sliced thin
- 1 large onion, sliced thin
- 4 carrots, peeled and cut into strips
- 4 slices bacon
Directions
In a large bowl combine ground beef, cracker crumbs, egg, lemon juice, cheese, green pepper and House Seasoning. Mix well. Shape into 4 patties.
Place each patty onto 2 layers of heavy-duty aluminum foil (enough to cover and close). On each patty, place potato slices, onion slice, and carrots. Slice bacon in 1/2 and place both slices on top. Seal aluminum foil tightly and cook on campfire or in a preheated 350 degree F oven for approximately 45 minutes.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups

Only 5 stars after a few changes...otherwise, still a 4! I accidentally forgot to add the lemon juice...even after I squeezed it! Oops! ;- I used Pepper Jack cheese, added several dashes of Worcestershire sauce, put the bacon under the patty (as others suggested to crisp it up (DO NOT like soggy bacon and it worked beautifully! I wasn't certain if I would like/love/hate the bell pepper in this, but I absolutely think it would not have tasted as good without it. Don't get me wrong, I love bell pepper, but this is sort of meatloaf-ish and I've never added bell pepper to my meatloaf. One more thing, I did have to cook this for about an hour and the carrots were far beyond "al dente" and the potatoes much less so, but still had a little crunch although sliced VERY thinly. I am definitely going to make this again...this weekend actually, but I will slice the potatoes even thinner as well as slicing instead of quartering the carrots. And not sure I missed the lemon...

It has been a while since I made them, but they are great. I make them for other people and they look at me funny when I tell them what I am going to cook. Then when there eating them they like em and want the recipe.
