Ingredients
  • 2 cups cooked chicken breast meat, cubed
  • 1 cup diced celery
  • 1/2 cup slivered almonds
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh lemon juice
  • 1 cup mayonnaise
  • 1 cup grated sharp Cheddar
  • 2/3 cup crushed potato chips
Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.

    Made this with the chicken of a whole rotisserie chicken, sharp cheddar cheese, Blue Plate mayo, salt and pepper and regular potato chips. I tried to use just the white meat of the chicken, but it wasn't enough, so I used all the meat of the chicken. It didn't fill up the 13x9 dish, but it was enough for the dinner party I went to. Everyone loved it and said they wanted the recipe.
    I cut the recipe in half, as we are a small family of 3. It was delicious. I will definitely make again espcecially when I have guests.
    Wonderful, easy recipe. Great to cook for a crowd. I will definitely be making this recipe again.
    It tasted good but I thought it was way to greasey. When you cook mayonaise it turns to a liquid. I'll never make this again.
    My kids gobble it up! However we substituted almonds for onions due to nut allergy and we are going to try fried onions instead of chips. We serve this with slices of tomatoes.
    Loved it! I was a bit skeptical about this recipe at first and went for something a bit more simple used leftover chicken, did not cube it and only applied a small squeeze of lime, mayo, mozzarella, lays chips and to season on top of it all some crushed pepper came out delicious!!
    This dish is fantastic! I did variate some from the recipe. I omitted the salt, replaced celery with red onion (not a fan of celery chose the fried onion topping in place of chips and added a dollop of sour cream to the mix. The chicken I used was leftover KFC chicken strips which worked great as they are already seasoned with a nice crunchy breading. We thought we'd be munching on this with crackers and it would make a great appetizer but we ended up eating it like a casserole, savoring every bite. Highly recommend this dish. Thanks Paula for another great recipe!!
    Love this recipe and have been making it for 30+ years! I think it was a originally a Betty Crocker or Better Homes recipe. Excellent served with fresh fruit and croissants. Definitely very rich.
    Very good but I used rotisserie chicken and it was very greasy. I also left the potato chips off.
    Too tangy for us. I do like the idea of having a hot meal with leftovers to use for cold sandwiches the next day, though, so if I try it again I will cut back on the lemon juice and add a sweet element like maybe a little apple or orange.
    only needs 1/4 tsp pepper for me.
    It was Delicious! Made a few changes based off of suggestions from others. This does NOT feed 8-10! It was just enough for 2! I would not add any salt, and I just added mayo until everything was coated. I also sauteed the celery a little bit. Toasted the almonds, used fried onions because I didn't have chips around, put it in a loaf pan which was plenty big. It was awesome!
    Needs either a little more chicken or a little less mayo. I use Panko instead or potato chips; less fattening. Also threw in some dill and rosemary.
    We love this little salad/casserole and have been making a recipe very similar since college. We add onion, more celery and drained pimientos for even more kitsch. Another reviewers idea for adding water chestnuts sounds great too.
    Loved this recipe!!! Make it often, however I add a couple dashes of liquid smoke and it gives it an added twist.
    I think this is a great chicken salad for the cold months! I'm having a ladies luncheon...what are the thoughts on using this recipe in halved pita pockets? Serve with a vegetable salad and fruit? Would this work?
    I adore this dish. I have used it for formal company, family, and pot-lucks. An absolute winner! You might want to try chopped water chestnuts instead of almonds. My sister can't eat the almonds so for that little extra crunch I put in water chestnuts. I also double the recipe so we can have leftovers. Delishhhhhh!

    This is a very good recipe. However, it didn't make much and it was just my hubby and me! It barely covered a 9 in sq pan! What is Paula thinking...........8-10 people?

    Lemon juice was stronger than expected on first bite, but couldn't taste after that. Delicious right out of oven. Even picky Mexican husband loved it.
    Since I was making this just for two, I cut the recipe in half and used a 2-quart baking bowl. I used fat-free Miracle Whip. I did not measure out the potato chips ... I crushed enough to just lightly cover the top. My husband and I enjoyed it ... there were no leftovers at our house.
    I love the recipe but I wonder if I am the only one who has a problem with the 13 inch by 9 inch baking dish. I've made this a couple of times and the 13x9 inch dish is way too big. Recipe barely covered the bottom of that dish. I didn't deviate from the recipe and I used a 5x8 inch dish and it came up the to the top,

    I absolutely love making this recipe for my family! My only complaint is that it seems to go everywhere when you put a serving on the plate. What I have come up with is placing a layer of crescent rolls on the bottom of the casserole dish before layering everything on top. It makes it even better than before!

    I love this recipe. After reading the reviews I made a few changes. 
    1. I used half the amount of salt 
    2. I used half the amount of mayo, made up for with 1/2 cup of lowfat sour cream 
    3. I used Lays Lightly Salted potato chips 
    4. toasted the almonds first 
    5. added 2-3 chopped green onion  
    6. added a couple of handfuls of craisins.  
     
    Soooo good. It's sitting in my fridge waiting for dinner tonight.
    So yummy! Awesome, southern chicken salad that we all had on Sundays growing up!! Love the extra crunch the almonds and celery give to the salad. My husband kept coming back for more and more!

    Tried this last night, very tasty but will probably leave out the lemon juice next time as it gave a funny taste
    I have been making this for over 30 years, but with cashews, grated onion and white or brown rice. If using rice, increase the wet ingredients. It's great without the rice, too. Delicious!
