Ingredients
  • 2 cups cooked chicken breast meat, cubed
  • 1 cup diced celery
  • 1/2 cup slivered almonds
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh lemon juice
  • 1 cup mayonnaise
  • 1 cup grated sharp Cheddar
  • 2/3 cup crushed potato chips
Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.

Made this with the chicken of a whole rotisserie chicken, sharp cheddar cheese, Blue Plate mayo, salt and pepper and regular potato chips. I tried to use just the white meat of the chicken, but it wasn't enough, so I used all the meat of the chicken. It didn't fill up the 13x9 dish, but it was enough for the dinner party I went to. This dish is fantastic! I did variate some from the recipe. I omitted the salt, replaced celery with red onion (not a fan of celery chose the fried onion topping in place of chips and added a dollop of sour cream to the mix. The chicken I used was leftover KFC chicken strips which worked great as they are already seasoned with a nice crunchy breading. We thought we'd be munching on this with crackers and it would make a great appetizer but we ended up eating it like a casserole, savoring every bite. Highly recommend this dish. It was Delicious! Made a few changes based off of suggestions from others. This does NOT feed 8-10! It was just enough for 2! I would not add any salt, and I just added mayo until everything was coated. I also sauteed the celery a little bit. I adore this dish. I have used it for formal company, family, and pot-lucks. An absolute winner! You might want to try chopped water chestnuts instead of almonds. Since I was making this just for two, I cut the recipe in half and used a 2-quart baking bowl. I used fat-free Miracle Whip. I did not measure out the potato chips ... I absolutely love making this recipe for my family! My only complaint is that it seems to go everywhere when you put a serving on the plate. What I have come up with is placing a layer of crescent rolls on the bottom of the casserole dish before layering everything on top. I love this recipe. After reading the reviews I made a few changes. 1. I used half the amount of salt 2. I used half the amount of mayo, made up for with 1/2 cup of lowfat sour cream 3. I used Lays Lightly Salted potato chips 4. toasted the almonds first 5. added 2-3 chopped green onion 6. added a couple of handfuls of craisins. Soooo good. Quintessential Paula! This recipe turned out delicious the first time I made it. I was snowed in this week with nothing but poached chicken and some odd pantry sundries, I decided to try to make this again and substitute a couple of the missing items. Turned out fantastic! Substituted quartered black olives and a half cup of chopped canned artichoke hearts for the celery, then added a bit of celery salt for flavor. No chips... dang. Anyhow, while I really missed the fresh celery and crispy chip crust, the recipe still works without it and you still get that satisfying crunch from the slivered almonds. I think this recipe can be successfully tweaked in a pinch as long as you keep the chicken, lemon juice, mayo, nuts, and cheese. item not reviewed by moderator and published
I'm pretty sure this was the first Paula recipe we ever had, and I have to say, I was impressed! It was very rich, however, and I think it could have been a little lighter on the mayo. The potato chips added a nice twist, but I think it could have used a few more. I really liked the almonds too. Just tried this recipe and we really enjoyed it. My husband is not a fan of casseroles, but he liked this one. Although I used a roast chicken (white meat only) for this dish and made exactly to specifications It was entirely too salty, inaccurate serving amount as posted on recipe, and well...somewhat bland. I originally saw the dish on Paula's show. The reason I chose this dish was her "boys" loved it so much and it was easy to make. I have a house full of teenage boys and I am glad that I made a batch first before I actually served it to anyone else. This tasted pretty much like I thought it would. I toasted the almonds before cooking. It was not bad but needed something. Next time Ii make it I might add some sliced green onions for both flavor and color. I have yet to find a Paula recipe that I havent liked!!! My mother in law makes this dish often and for a family of picky eaters to boot, everyone loves it. I recently made it and think it turned out great, I added in a small diced onion for more flavor but other than that I left perfection alone. I think the people who said too much mayo used canned chicken instead of the real deal, dont skimp on the chicken breast, canned chicken absorbs the mayo rather than coats it and can make it seem greasy. After making this according to the recipe, the second time I changed a few things for my family's taste. I toasted the almonds in a dry pan. Then I sauteed the celery in the pan. I made this recipe for dinner last night. As I have kidney disease, I have to watch my sodium intake. I made the recipe with no-salt rotisserie chicken, no-salt almonds, Lightly Salted Classic Lays and Light Best Foods Mayonnaise. The first time I made this, I doubled it and added more veggies - some red bell pepper and extra additions of celery, etc. I made two casseroles - one for me and my husband and one for a friend in surgery recovery. I used smaller as pans and we all loved it! I also reserved some raw diced veggies to sprinkle over each serving. Wonderful! Since then, I make one batch. I agree that a 9 x 13 is too big for this unless you double it. So I do the next size down. And I use leftover baked chicken breasts - cannot stand canned chicken... Also I am a potato chip purist. I have to admit, when I mixed it all up and put it in the casserole dish I wasn't impressed. I can see why all the complaints about the amount of mayo. I have been making hot chicken salad for years and everyone loves it. I use 4 cups of cubed chicken. to one cup mayo and 1 can cream of chicken soup. 2 cups celery, minced onion, 1 can sliced water chestnuts,sliced, well drained. I also stir in 4 chopped hard boiled eggs. Mix mayo and soup with 2 tbsp lemon juice before stiring into casserole. Refrigerate overnight. Next day Place in 9 x 13 glass pan top with 1 cup slivered almonds and 1 cup grated cheddar cheese. Sprinkle 2 cups crushed potato chips over all. 1 can french fried onions can be substituted for the chips. Give it one more try, you might be surprised!! item not reviewed by moderator and published

Hey! I recognize this dish. Back in the days of yesteryear when ladies entertained other ladies at lunch (excuse me: "luncheon") this was one of my mother's favorite recipes. My ex used to make this and she cut the mayo in half and usde half plain yogurt, low fat but NOT non-fat. Sour cream could work as well. It added some zip and cut down on the oil and callories. However she put the cheese on to instead of potato chips but in the mixture put small brownberry salad croutons or cubed turkey stuffing, about a half to 3/4 cup. My boyfriend and I both became very sick after I made this recipe. The warm mayo was not tasty, and it was very greasy. I normally enjoy Paula's recipes, but this one was terrible. I think the only problem I had with this was the fact that it was hot. Before I cooked it, I tasted it to check the seasoning and I really liked it? it was fresh and tasty! After serving it up hot from the oven, however, it felt different? heavy and a little unpleasant. It felt warm, but tasted like it should be cold ? if that makes any sense. I would definitely make this again, but if I do, I will throw in some grapes or dried cranberries and serve it cold with lettuce and dressing or on fresh bread. I made a dinner meal by serving this in whole wheat pita pockets with roasted veggies on the side. I used 3 large cans of chunk chicken breast, celery seeds instead of whole celery & added garlic, flavored almonds, onion powder, and creole seasoning. I used a little over 1/2 cup of mayo rather than a whole cup. I had dried cranberries, lettuce, shredded cheese, feta, and chopped apples on the side for everyone to make their own pita. DH actually commented on it being good, so that was exciting for me! lol I didn't give it **5** because of the amount of mayo, it needed some seasoning, and a serving suggestion such as a pita or something. I just made this recipe, and it's very easy to add your own ideas or favorites to the dish. Several adjustments I made were to add red bell pepper, and instead of all that mayo (yuck), I added only 1/4 cup of mayo, and then 1/2 a cup of sour cream. Also, instead of potato chips, I used store-bought bread crumbs. If you're making this recipe for a hungry family of more than 3, I would double it. I love hot chicken salad! I have a few suggestions to make it even better: instead of using crushed potato chips, try crushed corn flakes! It still adds that great crunchy experience and does not add any excess oils. Also I love to add water chestnuts for an extra crunch. item not reviewed by moderator and published
