    This is a family favorite in our house.. easy to prepare and quick. .I use up the left over rotisserie chicke and make a quick meal and serve w/ noodles or rice..
    can add chopped broccoli to this also. Onions are a must!
    Don't over cook or it will break down the mayo/cheese.. can cut back on amts used too.

    Hey! I recognize this dish. Back in the days of yesteryear when ladies entertained other ladies at lunch (excuse me: "luncheon" this was one of my mother's favorite recipes. It's good and it's easy and it's been so long since it was considered sophisticated that it's about due for a round of retro chic. I've giving a "luncheon" next week and this is what I'll be serving, with a big platter of various kinds of real salads to balance out the richness of this one. None of us are working that day so maybe I'll go even more retro and serve Pink Ladies.

    I just made it the other night for dinner and it was great. I never thought I would like my chicken salad hot but I loved it. I made it in a smaller recipe for just 2 people and we both enjoyed it very much. I make my own chicken salad like i did for the restaurant I use to work at and I have some already made to have this again. I highly recommend this recipe to anyone with a passion for chicken salad!!

    My ex used to make this and she cut the mayo in half and usde half plain yogurt, low fat but NOT non-fat. Sour cream could work as well. It added some zip and cut down on the oil and callories. However she put the cheese on to instead of potato chips but in the mixture put small brownberry salad croutons or cubed turkey stuffing, about a half to 3/4 cup.

    She also added 2 tsps of Worcestershire to the dressing for zip.

    Very good stuff. Very easy.

    My boyfriend and I both became very sick after I made this recipe. The warm mayo was not tasty, and it was very greasy. I normally enjoy Paula's recipes, but this one was terrible. If ever made again, I would substitute all the mayo for sour cream or cream of chicken soup.

    I think the only problem I had with this was the fact that it was hot. Before I cooked it, I tasted it to check the seasoning and I really liked it? it was fresh and tasty! After serving it up hot from the oven, however, it felt different? heavy and a little unpleasant. It felt warm, but tasted like it should be cold ? if that makes any sense.

    I would definitely make this again, but if I do, I will throw in some grapes or dried cranberries and serve it cold with lettuce and dressing or on fresh bread. Thanks for my new COLD chicken salad recipe, Paula! ;

    I made a dinner meal by serving this in whole wheat pita pockets with roasted veggies on the side. I used 3 large cans of chunk chicken breast, celery seeds instead of whole celery & added garlic, flavored almonds, onion powder, and creole seasoning. I used a little over 1/2 cup of mayo rather than a whole cup. I had dried cranberries, lettuce, shredded cheese, feta, and chopped apples on the side for everyone to make their own pita. DH actually commented on it being good, so that was exciting for me! lol I didn't give it **5** because of the amount of mayo, it needed some seasoning, and a serving suggestion such as a pita or something. However, it is very good & serves as a wonderful base recipe to build upon.

    I just made this recipe, and it's very easy to add your own ideas or favorites to the dish. Several adjustments I made were to add red bell pepper, and instead of all that mayo (yuck, I added only 1/4 cup of mayo, and then 1/2 a cup of sour cream. Also, instead of potato chips, I used store-bought bread crumbs. If you're making this recipe for a hungry family of more than 3, I would double it. Other than that, it's quick and easy!

    The recipe called for too much lemon juice. A scant 1 Tbls. would be sufficient.
