I wasn't looking for a spicy recipe, so I just used white cheddar instead of pepper jack. I also put the cheddar inside with some of the parmesan and I put lots of parmesan on top and then placed it in the oven. After all my little twerks, it was great!

I used 1/2 of the recommended spinach. The pepper jack cheese topping adds a nice mildly-spicy touch.

This is an awesome recipe, however I don't recommend topping it with the jack cheese, but rather just mix it all in with the other ingredients. Reason being, it's kind of hard to eat with chips, especially when it starts to cool down a bit. Also, make sure to use fresh Parmesan, not the powdered stuff, and frozen artichokes and spinach in place of the canned stuff (which are too briny and salty imo. If you like things spicier, try it with a habanero cheese in place of the pepper jack.

Very good! I added two cloves of finely chopped garlic and a dash of paprika. Freeman's restaurant in NYC is famous for their artichoke dip and I love their recipe, so I couldn't imagine making mine without at least some garlic. Super easy as well. I'm not sure how this would have been without the garlic, it added so much flavor. Family loved it.

This recipe was a huge hit with my family on thanksgiving! It was a perfect appetizer and very easy to make. I like to try and cut calories whenever I can so the only changes made were low fat mayo, sour cream and parm cheese. It tasted great and everyone loved it.

I usually love Paula's recipes, however, this one was missing something. I followed the recipe just as noted but I found it to be on the dry side. As I was mixing in the spinach, I thought it looked like way too much...I think if I had only added 2/3 of the spinach it wouldn't have been so dry (or maybe I pressed the spinach too much before adding it to the cheese/mayo mixture. It also seemed to be missing flavoring. I read where others added garlic to their mixture and if I were to every make this again, I'd definitely tweek it to include so type of seasoning.
