I have used similar dip recipes with the mayonnaise/ sour cream/ cheese base in restaurants and it always is a top selling menu item.
With this recipie always make sure the artichokes and spinach are drained really well... Try it with fresh spinach too.
May I suggest trying insted of the Parmesan and pepper jack, try grated Parmesan, Romano, pecorino, pretty much any hard cheese (or blend thereof for both in the dip and the topping.
Try adding bacon, ham, or even chorizo!
I always use fresh tortilla chips from the local tortillera in place of the bagel chips.

Luv ya Paula! I make a few changes in the recipe. And I did not use freshly grated cheeses. I took the easy way out by buying the shredded ones at the store. I used the parmesan along a colby cheese mixed with jack. I put them all in the mixture and didn't use it as the topping. However, I did top the mixture with shredded sharp cheddar cheese. Also in the mixture, I had to have a little bit of seasoning. I took another reviewer's advice by putting some onion powder, garlic powder, and black pepper. I also addded some finely diced cooked ham. Talk about yummy! Because I made these changes, it was the only reason I made this a 4 star recipe. :

This is sooo yummy...I've made it a few times & it's always been a hit. Easy to make, and lots of flavor & texture.

I made this a couple of nights ago and my husband and I loved it! I only put half of the artichokes than what the recipe said bc the artichokes I got were seasoned and the were very flavorfull. And I also added 1/4 cup of cream cheese( I had read another review that suggested to put it in bc it turned out creamier and it did taste really good.

Loved this dip! Everyone said it was better than any restaurant's dip. I used Sharp Cheddar cheese on the top rather than the Pepperjack and it was so good. Served with homemade bagel chips. (sliced bagel as thin as possible, spread olive oil on top, season with S+P, Oregano, Basil, and garlic powder, toast at 350 until toasty and flip. Hands down, AMAZING! Thank you :

I absolutely loved this dip. It didn't get 5 stars because I had to alter it. I always read reviews ahead of time and alter accordingly. For this, I grated 2 garlic cloves, added extra pepper and garlic powder (yes, we love garlic,and red pepper flakes. I also used 1/2 cup mozzarella and 1 cup pepperjack cheese in the mix and the rest of pepperjack on top. When it was done I mixed the topping in and added 1/2 cup of sourcream because I noticed it wasn't as creamy as I wanted it to be. In the end it was perfect. My 3yr old daughter couldn't get enough of it. It does not taste like restaraunt dip but to me it's even better because it has that homemade flavor to it. Thanks Paula!!!! Will def. be adding to recipe collection.
