    Don't listen to the negative reviews! This dish is deeeeelish!! Everyone loves it! The only thing is that it can get a bit too artichoke-y so I cut down the amount and it turned out perfectly!

    I made this dish as an appetizer to bring to my husband's family's Thanksgiving dinner. It was a huge hit- several people requested it again for next year. I made it up the night before in a small casserole dish and then baked it in the oven the next day. It worked out great. Very easy and inexpensive, as well as pleasing. Ignore the bad reviews saying this was bland- if you use REAL mayonnaise, REAL sour cream (not low fat, and GOOD quality cheeses, this recipe will work out great.

    This recipe is from the old original HOT ARTICHOKE DIP recipe (that's been around forever, but with added spinach. The original artichoke recipe called for HELLMAN'S REAL MAYONNAISE & PARMESAN CHEESE (NOT pepper jack! The spinach is a nice added bonus. The Hellman's mayo and the parmesan cheese give this recipe the pizzaz it was lacking here! Try it, you'll love it too.

    Was a little dry. Not quiet as creamy as I expected. WE still ate the whole thing so I t wasn't too bad. Will likely look for a different recipe next time I want this dip.

    This is the first review I've ever written but this recipe was so bad I felt compelled to write it. I figured any recipe from Paula Deen would be fantastic so I bought all the ingredients and then read some reviews. They weren't too good stating that it was bland and many people altered it. I decided to go ahead and stick with the original recipe and was totally embarrased when I served this. I must agree - it is tasteless. Also, the pepper jack cheese on top formed a hard cover as it cooled and there was no way to 'dip' anything in it. I had to scrape the cheese off and use a spoon to get it on some crackers as it just wasn't working as a dip. I've been cooking for 40 years and this goes down as one of my biggest disasters. Really, really bad...

    I hate to alter a recipe but this needed it. I followed Paula's original to the T but it really had no taste so I added a lot more pepper jack, a little more parm and added a few teaspoons of garlic and onion powder as well as some dried habanero pepper flakes. After that is was pretty good. The concept is right on but the actual outcome needs improvement.

    Good basic recipie, but it is a bland. I added another cup of parmesan and another 1 1/2 cups of the pepper jack, I also added about 4 tablespoons of hot sauce, more could be added depending on how much heat is wanted. With those few additions it made for a very tasty dip!

    With a couple of small tweaks, this turned out really well! I was surprised that it didn't need a lot of extra spice. The pepper jack cheese gave it just the right kick. However, I decided to add somewhere between a 1/4 - 1/2 cup of cream cheese, which gave it just the right amount of creaminess and a little more depth in flavor. Also, I used a combination of Romano and Parmesan cheeses. Next time, I think I'll add in some garlic as well. Overall, this is a good beginning for a spinach-artichoke dip.

    The dip tasted o.k., however I found it to be dry. Not the same consistency I had a restaurant the previious night. Will not be making this again.

    I make this using two large ramikins and serve it with a variety of crackers and breads. It's definitley met with anticipation and gobbled up quickly. I started making it last year and it has been added to my list of holiday regulars.
