I liked this a lot but the hard boiled eggs threw me a bit when eating it. Next time I make this I would probably substitute some boiled potatoes for the eggs and make it a bit more like traditional pot pie. The biscuit topping is very good and the pie itself has a great flavor!

If you are looking for chicken pot pie on a hurry this is a great recipe - The biscuit topping is the best part - With that said if you don't add additional veg. you would probably end up with a soupy mess. I added 1 potato , 1/2 can corn and 1/2 c celery and it came out really yummy :o - Not GREAT but good

Very good indeed! Quick and easy. However, after the first attempt I cut down on the amt of peas, added corn, and slightly precooked the carrots. Works very well with canned chicken if you're in a real hurry.

I'm hooked now. No more spending hours in the kitchen to make a pot pie. I made just a few changes to this recipe...added about 1 cup more of the veggies and chicken, and added a bit of sour cream to the sauce. The instant biscuit was the perfect topper for this dish!! My whole family liked it... even the picky ones.

I LOVE this recipe! It is quick and easy to make. To make it even easier, I use a rotisserie chicken from the store. To start, I saute use two carrots and two sticks of celery for 20 minutes on medium heat. I then throw 1/2 a white onion into the pan for the final few minutes. I add the chicken into a round, glass casserole dish. Then add the veggie mixture on top. Next goes 1/2 small can of peas and 3/4 large can of corn. Next the soup/chicken broth mixture on top of the chicken and veggies. I like to grab a spoon and just dig holes for the 'gravy' to seep into. Next comes the bisquick mix (it is sooooooo good! I add lots of pepper to the mix and I use about 1/4 cup of butter on top and it is delicious.
Don't worry if your like me and want to add more bisquick mix on top (although I wouldn't go crazy with it haha! This will affect the amount of time it takes to cook but it's worth it!

Easy quick recipe! I sauted some onions, garlic and mushroom that I added on top of the chicken. I also added green beans but did not use the egg. As others suggested used half the butter and everyone enjoyed.

Okay - this gets five stars for inspiration!
I cooked the chicken breast in a cup of seasoned (seasoned with garlic and thyme chicken base, removed the chicken and added onions, carrots, celery, red bell pepper, and potatoes to cook for about 10 minutes. Added my diced chicken and cream of chicken soup.
Made my biscuit topping using pancake mix (all I had: 1 1/2 cups mix, 1 cup milk, 1/4 cup melted butter, and 1 egg.
Fan-dandy! Perfect for a chilly Montana evening meal!
