Ingredients
  • 1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
  • 1 (20-ounce) can crushed pineapple
  • 1 1/3 cups sugar
  • 1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
  • 1 1/2 cups heavy cream
  • 1 cup flaked, sweetened toasted coconut
Directions

Preheat oven to 350 degrees F.

Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.

Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.

Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.

One day I lick my lips and kissed my hand with a peck, For I heard tell there was a cake that was better than having sex. And because this man of mine was a total ass wipe jerk, No pill or potion every made on him could ever work. So I baked it! A quickie cake with no foreplay Just instant it in a box- Baked it up, then cooked pineapple And slopped it on the top. I grabbed me up some pudding and softened cream cheese too, Then mixed them both together till the flavor blended through. I spread it on the pineapple that laid atop the cake, Building up a climax now I could hardly wait. I am compelled to write a review on this cake ( my first review by the way) because I thought it was the most disgusting cake I've ever tasted. I made it for my parents anniversary because my parents love coconut. My husband said it tasted lie hat he would think cake in jail would taste like! He was right on. It was waaaaaaay to sweet. Made this cake twice, I added coconut rum and everyone loved it. The second time I used shredded coconut instead of toasted and I think it&amp;#39;s much better. The toasted is crunchy if you like that but also somewhat dry. I also cut down a little on the sugar and used French Vanilla cake mix. I don't understand all the excitement about this cake. Definitely not one of the best cakes I have had before...there are much better cake recipes online than this one. This was very good, very light, and VERY easy to make. I can't say that it was AMAZING, but it was really good. The recipe calls for too much sugar for my taste. Next time I will boil the pineapples with only 1/2 cup of sugar and keep the 1/3 cup of sugar for the whipped cream the same. I think the cake would also go well with slices of strawberry on top. Absolutely awesome! Thanks for all the tips, including TJ cake mix and pastry cream. I made one beginner mistake of impatience...pastry cream got a little lumpy at the last second, but I got lots of compliments anyway cuz no one noticed. This cake was amazing! I made a few adjustments that I felt made it a bit better: I did not boil pineapples with sugar, it would of been WAY too sweet. I made this cake for my boyfriends birthday. IT WAS GREAT! The only thing I would have changed though was the pineapple factor. I would have either added more pineapple or done without it all together. When eating this cake we would all randomly get random little bites of pineapple and it just wasnt enough or shouldnt have been apart of it at all. My boyfriend (who is a chef suggested adding pineapple to the cake mixture itself, which I think will help. Super good and very easy. Although I changed a few things here and there. I changed the presentation into a layer cake, filling the cake with a thick layer of custard and the pineapple mixture then topped cake with the whipped cream and toasted coconut flakes. I also used homemade pastry cream instead of boxed pudding. It only takes 10 minutes to knock out a recipe of pastry cream and the taste difference is well worth it. Some notes on ingredients: I used Trader Joe's vanilla cake mix. It's really good with a nice hit of real vanilla flavour and vanilla bean flecks. I don't like the strong fake vanilla flavour and fake butter flavour in supermarket cake mixes--it tends to overwhelm everything else. I also like to use natural coconut flakes from the bulk section at Whole Foods (or any health food store instead of Baker's over sweetened ultra-processed coconut. I have been making this cake for years, but with a slight variation. The recipe passed to me uses an un-sharpened pencil to make the holes. I cover the pencil with a little plastic wrap to ensure cleanliness. The holes are larger than what you get with a fork and this allows the pineapple to get into the cake a bit better. Then after adding the pineapple I sprinkle the cake with pecans before adding the pudding. I typically use cool whip and then on top, I sprinkle more chopped pecans with the pineapple. This is the cake we had for our 10th wedding anniversary party and it was made in a half sheet cake size. I used maraschino cherries to make a heart on top of the cake. 3.5 stars. It is good, light and tasty. The texture was not too loose or watery at all. I guess using the yellow store-bought cake mix is what just makes it not-the-best-cake-in-the-world. I tried this recipe, and I have to agree it is so amazing. I did add a few things to make it my own. I used coconut milk in the whipped cream. It made the consistency more of a liquid than cream, so I just add the whipped topping as I am serving it. I also added apricots and mandarin oranges just to give it that extra flavor. This one made me sign up so I can leave a review. I am always trying Paula's recipes. This one is the absolute best. I actually made two of these yesterday, one for my family and one to take to work for a potluck. The one for home was banana cake w/ banana pudding, the one for work was an orange supreme cake w/ vanilla pudding. The one w/ the orange wins hands down!!! I followed the recipe exactly, and it turned out awesome. I honestly didn't like the banana way, but it didn't refrigerate all night like the orange one did....that may be the difference. Hands down a brilliant and simple cake and is totally worth the effort you put into it! if u make it right..it is so light and fluffy. Oh my lord how it melts in your mouth. A real winner for anyone who has a sweet tooth. I made this on my 21st birthday along with a better than sex (chocolate) cake...i got nothing but complements. the chocolate is very very sweet, more like a candy cake but great. I love this cake!!!!!! You really have to let it chill so it isn't soggy and wait till it is cool before putting the pudding or the whip cream on it. I like to use brown sugar for the sugar in the pineapple it gives it a caramel flavor like pineapple upside down cake. All this with the whip cream and the toasted coconut makes it a five M recipe. I made this cake for our local barn dance. It was the hit of the night!! Everyone wanted the recipe! And it was sooo easy to make. It is the most amazingly delicious cake! I dont know what I did wrong, but it turned out MEGA SOGGY! I am so bummed out. My grandma used to make this "scandalous" cake and it was always delicious. The only thing I did differently was substitute coconut oil for the vegetable oil (healthier). I am so sad, I have a huge pan of muck. My thought is that the pinesapple should have been drained, but the recipe doesnt say that. I dont know what I did but I dont like soggy cake and the whole thing is probably goin in the dumpster.
