Ingredients
- 1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
- 1 (20-ounce) can crushed pineapple
- 1 1/3 cups sugar
- 1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
- 1 1/2 cups heavy cream
- 1 cup flaked, sweetened toasted coconut
Directions
Preheat oven to 350 degrees F.
Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.
Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.
Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.

I have been making this cake for years, but with a slight variation. The recipe passed to me uses an un-sharpened pencil to make the holes. I cover the pencil with a little plastic wrap to ensure cleanliness. The holes are larger than what you get with a fork and this allows the pineapple to get into the cake a bit better. Then after adding the pineapple I sprinkle the cake with pecans before adding the pudding. I typically use cool whip and then on top, I sprinkle more chopped pecans with the pineapple. This is the cake we had for our 10th wedding anniversary party and it was made in a half sheet cake size. I used maraschino cherries to make a heart on top of the cake. It is one of our favorites!!

3.5 stars. It is good, light and tasty. The texture was not too loose or watery at all. I guess using the yellow store-bought cake mix is what just makes it not-the-best-cake-in-the-world. If I make this again, I think I would make a homemade cake instead of the store-bought kind.
