This was very good, very light, and VERY easy to make. I can't say that it was AMAZING, but it was really good. The recipe calls for too much sugar for my taste. Next time I will boil the pineapples with only 1/2 cup of sugar and keep the 1/3 cup of sugar for the whipped cream the same. I think the cake would also go well with slices of strawberry on top. Yummy and easy recipe!

Absolutely awesome! Thanks for all the tips, including TJ cake mix and pastry cream. I made one beginner mistake of impatience...pastry cream got a little lumpy at the last second, but I got lots of compliments anyway cuz no one noticed. I may try to cut the cake thru the middle for 2 sheets next time and put the pastry cream inside, but it's most definitely yummy!

This cake was amazing! I made a few adjustments that I felt made it a bit better:

I did not boil pineapples with sugar, it would of been WAY too sweet.
I used a french vanilla cake mix rather than yellow.
Also, I added a teaspoon of vanilla to the whipped cream mixture.

Great Recipe! I didn't add sugar to the pineapples after reading the reviews that it was too sweet. I also used sugar free cake batter, sugar free pudding and sugar free cool whip as topping. My daughter decorated it with strawberries on top.

I don't know if it is better than sex, but the competition is close !!! I tried this recipe for my mother's 60th Wedding Aniversary and everyone loved it.

I made this cake for my boyfriends birthday. IT WAS GREAT! The only thing I would have changed though was the pineapple factor. I would have either added more pineapple or done without it all together. When eating this cake we would all randomly get random little bites of pineapple and it just wasnt enough or shouldnt have been apart of it at all. My boyfriend (who is a chef suggested adding pineapple to the cake mixture itself, which I think will help. Other than that this cake was great and I would gladly make it again, I would just do without the pineapple or add more. Great cake! Thanks Paula Dean!

Best. Cake. EVER!!! Wow. Everyone at work having fits over it. My boss emailed me: "it's like I've won the lottery!!" Best at least 24 hours after making. I may try another reviewer's tip about using brown sugar with the pineapple next time, that sounds scrumptious...

Super good and very easy. Although I changed a few things here and there. I changed the presentation into a layer cake, filling the cake with a thick layer of custard and the pineapple mixture then topped cake with the whipped cream and toasted coconut flakes. I also used homemade pastry cream instead of boxed pudding. It only takes 10 minutes to knock out a recipe of pastry cream and the taste difference is well worth it.

Some notes on ingredients: I used Trader Joe's vanilla cake mix. It's really good with a nice hit of real vanilla flavour and vanilla bean flecks. I don't like the strong fake vanilla flavour and fake butter flavour in supermarket cake mixes--it tends to overwhelm everything else. I also like to use natural coconut flakes from the bulk section at Whole Foods (or any health food store instead of Baker's over sweetened ultra-processed coconut. The flavour and texture is much more true.

OMG !!! Been making this cake since 2003! It's so awesome, so easy to make and a great summer dessert. I use 2 cans of pineapple, instant pudding and cool whip. I'm making it again for a barbecue tomorrow. We love this cake and Paula Deen!!!

I made this cake for my boyfriend for his birthday. His co-workers & him enjoyed this cake! Instead of using sugar for the whip topping I used powdered sugar and I included toasted almond slices. I will keep this in my recipe box. This was a GREAT HIT!!
