This is a terrific cake. I had been trying to get the recipe from my nephew-in-law and I can see how he did not want to share. Thankfully I am a Paula fan (although I often cannot see her show and I happened to see her make it.

    It is a family's favorite.

I shared it with my advisor/dissertation chair (Canadian and hope she likes it as much.

My dad requests this cake for every occasion...loves it! I've learned that if you drain off some of the pineapple juice the cake doesn't turn out as soggy. Very tasty dessert!!

This cake was very easy to make. I brought the cake with me to a house warming and it was a big hit. The warm summer night was a perfect setting for this cake and I got more compliments along with the house!

I tried this cake when a friend made it and it was awsome. I then made it myself, not only is it easy, but yummy to boot. I substituted the homemede whip crean with cool whip and it was just a yummy!!!

Took this to a potluck and it disappeared before all the other desserts! I used Cool Whip instead of real whipping cream. It was so moist...not like cake, better! What a hit! Can't wait for an excuse to make it again! I let the pudding thicken about 5 minutes then poured in on top of the hot cake and pineapple juice. Then put it in the fridge to cool completely. The next day, just before serving I added the cool whip and coconut. Turned out perfect!

I made this cake the other day and it was good. The only thing about it is it gets soggy after a couple of days in fidge, so be sure to have lots of people over to eat it that day.

everyone loved this cake because of the light and sweetness of it. my family prefers light and sweet to rich and chocolaty for desserts...it was delicious!

I made this cake for a covered dish gathering at church and it disappeared fast. I did modify the recipe a little bit. I bought a 7 ounce bag of coconut and toasted a little more than half of it. I scattered the rest of it over the warm pineapple syrup because I didn't want to waste it.

The recipe doesn't state this, but the cake should be cooled and the pudding should be allowed to cool and thicken before spreading it on top of the cake. The pudding will be too runny if it is spread onto a warm cake.

Also, 1 cup of heavy whipping cream isn't enough. I used 1 1/2 cups and that almost wasn't enough either. A whole pint would be better. And the whipped cream will remain stiff if it's beaten at high speed continuously until it's stiff and confectioner's sugar is used instead of granulated sugar.
