This is an easy healthy recipe for a weeknight meal. I added garlic to the chicken and it received great reviews from everyone at the table. Thank you Paula!

This recipe rocks! If you are looking for a healthy, feel good food, this is it! I was simply amazed I made something so darn good, in so little time. Only thing I did differently was when cooking chicken I added dried Italian spice mix, sea salt, and ground pepper. Also, added 1-2 cloves of garlic diced after cooking onions. For my vegetables added a little cabbage to the mix. My husband and I loved it! Next time will use bigger pot for more left overs to freeze. Try this you won't be disappointed.

plain and simple. Easy to make soo good. whenever my husband is sick it's the thing he wants now instead of chicken noddle. even my picky toddlers like it. Parm on top made it just right.

For those of you who are so diligent to their diets, I have made this recipe multiple times and I often add some green cabbage to it as it is an awesome calorie burner. Instead of adding the parmesean cheese, I add a wedge of Laughing Cow Light Swiss to the middle of my bowl and everything gets instantly creamy and so yummy and only 35 calories for one wedge.

I've always been a fan of Olive Gardens "Zuppa Toscana" Soup and thought no other could come close, but after my wife fixed Paulas Italian Chicken Vegetable Suop, I'll go on record to say, "It's the best soup I've ever eaten...bar none".
My daughter and her husband came over and tasted the soup yesterday, and they agree, it's great. My hat goes off to Paula for this recipe.. It's the best soup in the world.

This soup was absolutely amazing, easy, and modifiable depending on your ingredients! I've only made one other soup ever, but this was the best I have ever had, and my boyfriend won't stop talking about it! The few changes I made....
-instead of two zucchinis, I used 1.5 zucchinis and 1 yellow squash
-I added about a cup of green beans broken into bite sized pieces
-Added one minced hot cayenne pepper in when you add the carrots and onion (If you don't like spice, skip this step
- Added chopped parsley and rosemary, about 2 Tb. each after cooking the chicken
-After everything was assembled I added 1 Tb. Italian seasoning
I chopped everything while the chicken was cooking, and in took about 20 minutes to prepare, 30 minutes to simmer, just as the recipe indicated. I sent it to all of my family and friends, you won't be disappointed!

Fixed this in the crock pot today. The flavor is so good. Served with cornbread. So easy and simple but the flavor is so good. This one is a keeper.
