when i find a simple recipe i like to change it up and make it my own... so with this good base idea from paula... instead of chicken i used polish sausage, and fire roasted tomatos, and just added some spices, like garlic, basil, oregano, parsley, (fresh or dried works i also like adding some pasta to it also, any kind will really do, but tri-color bowties are quite festive for this soup :

I added cooked dark meat chicken at the last minute and I think that made the soup better than the dry white meat.
And I also added some shell pasta. Perfection. \
Its a good recipe to start with and then put your own little touch on.

I make alot of homemade soups.....and usually don't use a recipe, but after watching Paula's show with this Italian Chix/Veg Soup recipe, I just had to try it. OMG the flavor was wonderful and oh so easy to do, Just don't forget the parmesan cheese to top it off!!

Breast meat is too dry for soup; thighs are better. It's a travesty to label this "Italian."

I saw Paula make this on TV a couple of weeks ago and have been waiting for the perfect night to make it. Tonight was the night! I followed her recipe-exactly! I did not add or change anything. It is perfect the way she made it. VERY easy and yummy-I bet it's even better tomorrow.

I saw Paula Deen make this soup on her show and decided I just had to make it for myself. I'm glad I did! I will be making this soup over and over again. I embellished this recipe by adding two ribs of celery with the carrots and onions, and then adding 8oz sliced mushrooms with the zucchini and tomatoes. I then added 6oz fusilli the last ten minutes the soup simmered, and seasoned with salt, pepper,,and garlic powder along the way. The end result? Fantastic soup - and so easy!

I added salt, pepper, garlic, basil and oregano. I added the garlic when I added the carrots and onions. Much better!
