Ingredients
- 2 fresh coconuts, whole coconut, not shredded
- 2 cups chopped fresh ginger root
- 4 cups raw brown sugar (recommended: Natural Sugar)
- 1 cup chopped pecans (or nut of choice) optional
- Melted chocolate, for dipping
Directions
Crack open 2 coconuts. (Putting the coconuts in a 250 degree F oven for several minutes will make them easier to crack open). Scoop out the coconut meat using a paring knife. Clean the coconut and cut up into bite-sized pieces.
Put the coconut pieces and chopped ginger root into a large pot (cast iron works best). Cover with water and boil for 3 to 4 hours to soften and bring out the flavors. Be sure to continue to add water as it boils down. Once the water has reduced, add brown sugar and boil for another 30 to 40 minutes or until there is no liquid left. It should be in a syrup state. Fold in chopped pecans. Drop pieces onto nonstick foil and let set for about 15 minutes. Dip in melted chocolate and sprinkle with chopped nuts.

Yum-oh! This is a very easy but time consuming dish. It is excellent for those who are patient enough to work through the whole process. I do recommend following the tip about putting the coconuts in the oven for just a few minutes. It was the easiest time I have ever had shelling a coconut. It looks like a mess until the sugar goes in. If you like coconut and/or ginger, you will love this.

Unless you are an expert with coconuts(which I am not... do not even attempt to do this. This is my first time tackling a coconut and it took me almost an hour to prep just one! I thought I would make 1/2 the recipe just in case it didn't turn out, if i would have bought 2 coconuts, I would have thrown the other one out the window! Too difficult! I am only doing prep today, and it's a good thing, because I knew I would not have time for prep & cooking tomorrow, so I am 'marinating' the cubed coconut in the liquid (in the fridge over-night and will start cooking process in the morning. so, to be continued.... I'll let you know how the rest of it goes, I didn't buy all the ingredients and put the time into the coconut not to finish it.
