Unless you are an expert with coconuts(which I am not... do not even attempt to do this. This is my first time tackling a coconut and it took me almost an hour to prep just one! I thought I would make 1/2 the recipe just in case it didn't turn out, if i would have bought 2 coconuts, I would have thrown the other one out the window! Too difficult! I am only doing prep today, and it's a good thing, because I knew I would not have time for prep & cooking tomorrow, so I am 'marinating' the cubed coconut in the liquid (in the fridge over-night and will start cooking process in the morning. so, to be continued.... I'll let you know how the rest of it goes, I didn't buy all the ingredients and put the time into the coconut not to finish it.

I love ginger, and I love coconut. However, I do not love spending an entire day working on a recipe to have it FAIL. The end result tasted good but ended up as tiny pieces because the syrup would not keep it together. It would be nice to have water measurements.

This was a complete waste of a day's cooking! The prep is NOT 10 minutes as the recipe says. It took well over an hour. The end result does not taste as good as it looks. Completely not worth it.

i bake a lot and this recipe was too hard to follow. how much water to start with, how much to end with. do you keep boiling until the coconut is soft like a potato. i boiled this for about 6 hours. i added the sugar when i thought it had reduced enough and it took over an hour to become syrup. i took scoops of mix and juice and put them on parchment paper and it has been over an hour and the syrup is still not stiff. too difficult and not enough taste. not worth the effort.

Good Day Paula,
Usually I do not critique your cooking skills as I enjoy watching and cooking your recipes. However, when I saw this show on Sunday october 18th where your guest showed you how to prepare this Caribbean Treat, I fell off my chair.
Being a native Jamaican, I could not help but comment on this preparation that the guest thought would be easy for anyone wanting to make this treat to follow.
