    I must start by saying that the cake came out tasting absolutely DELICIOUS! I am an experienced baker and followed this recipe to a "T." The only thing that I did differently was substitute half of the milk with sweetened coconut milk, for more coconut flavor (that should not change the consistency, however. The cake was stuck to the pans (and i had over-greased and floured and once I got the cakes out of the pans they were awfully crumby. It was not only difficult to frost the cake with all the "crumbiness" but cutting it was equally as difficult. I am not sure why the cake is crumby, but after reading some other reviews, I am glad to know I am not the only one. My advice would be to test this cake out before serving it for an occasion, as well as maybe using a different vanilla cake recipe. Again, this cake was delicious, but just plain messy and not pretty.

    I made this cake and it was delicious!! My family and neighbors loved it! It will be made often throughout the year in my home! Thanks Jamie and Paula!

    Yum! We (my 9 & 11 year old neices made this for Easter dessert. I did use the coconut milk instead which made for a delicious flavor. The batter was dense but the cake turned out perfect. It was not super moist but I think that is where the filling worked. I made it the night before and let it sit in the refrigerator until the next morning. Then I placed it on the counter in the morning until we were ready to frost it after church. Thanks Paula and Jamie!!!

    I was initially worried about baking this for Easter dessert. Many said too dry, some said not coconutty enough, some had trouble with the frosting. Well, I dove right in and made it EXACTLY like the recipe with one exception. I used coconut milk in place of regular milk when called for. Do not worry about this cake not being excellent. It was perfect...

    best cake I ever had (or bakeit was fluffy and moist not hard to bake .now i know wat cake to bake for any special ocasions. TONIE from SAN DIEGO CA.

    Very dry and crumbly don't waste your time on this cake! I may not be a chef, but I do consider myself a very skilled baker. I've been baking since I was a teenager. I was also a chemist for many years, so I know how to follow a recipe/protocol. The recipe as given here isn't accurate; It doesn't tell you to marinate the layers 3 days before serving. I had to find that out by watching a Paula Deen Video from an entirely different link. Secondly, this recipe fails to tell you that the seven minute frosting should not be made and used until the day you are planning to serve the cake. And the video I watched just assembled and frosted and barely mentioned the marinating part.
    So be warned, if you frost the cake and then store the cake for more than a day the frosting will dissolve and granulate. But otherwise the frosting is great.
    The cake is, as many others have said, very crumbly even with the coconut milk marinade.

    The batter was very thick, reminded me of cornbread batter. After baking, the layers looked beautiful. The prepared filling looked very liquid, not at all like fillings I generally use. I filled the cake according to directions. Filling looked like a milky coconut drink. Frosting was beautiful, delicious, easy to make looked great on the cake. My cake looked exactly like the one in the picture, beautiful.

    When I cut into the cat to serve it was like trying to cut through 3 layers of pound cake, so dense and dry it was hard to cut. The filling was not tasty, unless you really like a strong sour cream flavor. The frosting was wonderful, light, just the right amount of sweetness with a great texture.

    I will not use this cake recipe again. Extremely diasppointing.

    This cake was totally scrumptious and was restaurant quality. I had never made 7 minute frosting before, thinking it is too much trouble, but I gave it a try with this recipe. And very glad I did. The entire cake met or exceeded my expectations. For those whose cakes turned out dense and hard, you probably did not use self-rising flour. Paula, thanks you for your wonderful recipes. You've never let me down.

    I followed the recipe to the "T". However, it looked NOTHING like the one in the video. It was too dense and hard to cut into and it was way too sweet. How can it not be when the ingredients call for 1c coconut milk, 2 1/4 c sugar, and sweetened 3 1/2 c coconut flakes. Yow! That's a diabetic coma waiting to happen! It was not good at all for all the work involved. I won't be making this again.

    I made this cake for New Year's Eve, when we had two couples for a nice dinner. It was horrible. I made it twice, thinking I missed something the first time around. Dry and dense. I was embarrassed. It was the only dessert I made for dinner and it was basically unedible. This is the ONLY recipe I have made from Paula that was a flop. Very disappointed.
