    I always bake something for the holidays and this year my aunts and uncles kept talking about a coconut cake so I went searching and found this recipe. My brother and I made it together. It was so easy and with the White Mountain frosting it looked like a professional cake! It was the best cake I have ever made and tasted. My whole family loved it and there was only a tiny sliver left at the end. My husband's grandfather was scraping all the leftover cake and frosting off the plate, that's how good it was. I would recommend this cake to anyone!!

    I took this cake to my holiday bunco party. It was a hit! There was only one piece left on the plate. My friends kept coming up to tell me how tasty the cake was. I usually make good desserts, but this one took the cake! I seriously have never had so many compliments on a cake before. Delicious!

    great cake! and looks gorge! But the icing didn't taste all that great with the cake.Or at all, i had to make the icing three times to get it right. Over all it was great, but I have had better coconut cakes. I will def use the cake part of the recipe again though. maybe a differnt icing.

    Followed the recipe exactly. I brought this to work, and it was gone in 15 minutes. Makes a big cake. When I told my co-workers it was Paula's recipe, they said "no wonder it's so good!"

    Something amazing happened tonight when I baked this cake with my son. I'm a Southern Baptist, and we have get togethers that often center around food. There is this elusive coconut cake that you see sitting on the dessert table as you fill your plate, but - by the time you get to the cake - it's gone, just a trace of frosting and coconut to be scraped from the platter. My family has some Ol' South recipes, among them the 1-2-3-4 cake and 7-minute frosting, but we never used them for a coconut cake. My son requested this cake for his birthday. He has recently come to love coconut and I had no way of knowing how to bake a great coconut cake. To my surprise, as we were frosting the cake, it hit me: THIS IS THE CAKE!! Oh, joy, rapture, and good feelings all over! Now that I know how to bake the cake that heretofore only Ol' Southern Ladies knew how to bake, I will be also bringing my cake to the covered dish dinners. Maybe then, I can actually have a real piece of this amazing cake instead of settling for the mere crumbs that remain when a cake is "known" to be the one by which you will never be disappointed. It was easy, and we had no coconut milk in town, so we replaced all the vanilla with coconut extract. Next time, I will make the cake earlier instead of the night before the celebration. Thanks to those who suggested it. This is the kind of cake that only gets better with time - kind of like our Ol' Southern ladies!

    the recipe is very easy (especially for me, I am not a great cook. The 7 minute frosting is a little too sweet and very runny, so it makes a bit of a mess. The filling is a little heavy on the sour cream, but I added a little coconut extract to both the cake batter and the frosting, which gave it just a bit more coconut flavor. The cake batter came out very well, I will definitely use the 1-2-3-4 recipe again!
