    The cake itself didn't have a strong coconut flavor-I would definitely add coconut extract and coconut flakes. However, it was moist and firm. The filling was absolutely disgusting. The outside frosting was pretty good, especially the next day when it had cooled.

    I thought since I did not take the time to learn my great-aunts recipe for her "famous among everyone who's ever had it" coconut cake, that I'd have to settle for a once in a while decent tasting one. But no more!!! I knew from watching Paula make this cake on the show that once I tried it and tweeked it just a little, that I would caputure my aunt's cake again. Thank you soooo much!!! This is the absolute best cake I have ever made! I do my coconut fresh and add pineapple filling...IT'S FAB-U-LUS!!!!

    Have made this cake many time and it's always a hit.When I went on a recent trip to Australia and made it for friends while there & had a request to make it again 3 days later..lol..lol. guess they know a good thing "Down Under"too. Thanks Paula for a great cake!!!!!!

    I thought that the cake was beautiful as far as presentation goes but the cake itself was too dense. I also think that it did not have enough coconut flavor. Nobody wanted to eat it because it was so heavy.

    The first time I made this it was gone the same day. The same thing happened the next time. Then I tried something different and used the filling, without the coconut milk and made a milk chocolate icing. YUM!!!!

    Delicious! The filling is not too sweet. The icing is old-fashioned and fun. My friends request it for every birthday or pot luck.
