I am not a coconut lover but my man has a major sweet tooth so I made this for him. He said it was beautiful. I did do a couple things different though - instead of 4T milk in the filling I used the coconut milk that was leftover from making the cake. I also only baked 2 nine inch layer cakes b/c the batter did not look like it would be enough for 3. They came out fine. Did not find it necessary to use the toothpicks. Will take the suggestion of another review & not put the filling in the top layer b/c it was a little tricky to frost except I find out if you let the frosting sit a while it hardens & makes it easier to frost the cake. As far as crumbling problems, a little bit but maybe follow another suggestion to keep in refrigerator for a while. Will make again but maybe try whip cream frosting like someone else suggested. Pretty easy cake to make. Great for coconut lovers. Toasting the coconut is a good idea too!!!

I made this for a family member's birthday, and they said this was the best coconut cake they had ever eaten. It was easy to prepare, and I didn't have to use the toothpicks as stated in the receipe. Great coconut cake for any occasion. Thanks Paula!

Ok, so I made this cake at 11 at night and I failed to read the directions properly. I made a white cake and made the filling with coconut milk. I also doubled the filling recipe for added moistness and whipped up some heavy cream with powdered sugar for the frosting. Personally I'm not a big frosting lover, so the whipped cream was perfect!! Everyone loved it!!!!

I love this cake so much, but it crumbles so much when you cut it. Am I doing something wrong or is this supposed to happen? My husband loves says this in now his favorite over chocolate cake. Thanks Paula. I love watching your show.

I made this cake for my husband's birthday party in May. I have now had to make it 4 times for people who were at the party becuase they loved it so much. I have actually gotton to give it away as presents. Thanks for the great recipe.

I made this cake for the first time this past weekend for a picnic. The whole cake was gone in about 15 minutes. It was so easy and delicious! Everyone loved it. The cake turned out perfect. Thanks Paula!

I followed the directions to a "T". I was very disappointed because the cake just crumbled out of the pan, the 7 minute frosting is so sweet it makes your teeth ache and really tastes more like a meringue which is not a fave for me anyway. The filling is yummy, I will adapt it to other recipes. I did lightly toast the coconut, I think that helped. Do not serve where you want to have nice presentation. If you don't mind the cake being almost un'slicable, and it crumbling all over the counter and floor then you will like this cake.
