    This is my final time trying this recipe. I have tried it twice before thinking i was doing something wrong. I am doing nothing wrong. This cake comes out dry every time. Maybe it's supposed to be dry since you pour the filling in. I don't like wet cake so i used Cream Cheese frosting instead. I am a very good cook and this cake is dry!!. My icing was supurb. The layers came out even and had good height. Even the flavor was good. But it was just too dry. I watched it like a hawk and took it out of the oven before the time as not to let it get to dry. Oven temp was right. Did not over-beat. I am not wasting any more butter, sugar, flour and time on this one.

    I am so very disappointed about this cake. I could cry. I intended to make it for my father's birthday because he loves coconut. The texture of the cake was dry and it basically fell apart. I couldn't even get it out of the pan. It came out in sections. It also reminded me of cornbread instead of cake. The "frosting" is an absolute joke. I thought that it should have been thicker like frosting not runny like water. It just made the cake really soggy. On top of that, the cake was already falling apart, didn't need to add anything to it that would make it worse.

    The filling was actually good after you play around with the ingredients. This was the only thing I liked about the cake. So basically I just wasted 2 1/2 hours and whole bunch of "sugar". This cake was way too sweet and I love sugar. I usually LOVE Paula Deen's recipes. I am a huge fan but this one is a no go. I will never make it again and I am throwing the entire cake away. What a waste.

    THIS CAKE RECIPE IS WONDERFUL!I MADE IT FOR MY FOR FAMILY AND THEY LOVED IT SO MUCH I MAKE IT OVER AND OVER AGAIN.ITS VERY SIMPLE AND SUPER GOOD!

    This was the worst cake I have ever tasted, and to make it worse it was very complicated- not a quick and easy dessert at all! The sour cream in the filling gave the whole cake a very sour taste. It wasn't sweet enough, and the cake was dense. Will NOT make again. Yuck!

    Yum, since I've made this - I've always been able to remember the ingredients thanks to the easy 1-2-3-4 memory trick. A delicious and moist cake for any occastion. And it's easy to mix up the fillings. I like to add fresh bananas and strawberries to the center.

    I have been wanting to try this for a long time. Finally made it for Easter. Great cake that got better each day. I served it the day after preparing and it was good but next time I will try marinating it like the video suggests x 3 days. The 7 min frosting goes way back to Betty Crocker days...a little tiring mixing for 7 min. I used a make-shift double boiler aka regular pot over another pot with water and although that still worked it felt clumsy and awkward. I think it's time to invest in a "real" double boiler. Great recipe Jamie and Paula.

    An Easter hit! I had to make self-rising flour by adding baking powder. Cake was dense but the filling makes it moist. I had a ton of frosting left over. Next time I will put each layer on a separate plate, spread the filling on the layers, cover, and "marinate." Then put frosting BETWEEN the layers and on top of the cake when assembling. There's enough to go around.

    I made this AMAZING cake for our Easter dessert and it was the biggest hit out of ALL the food that I made and guest made!! I thought it was very easy to make, and have to say was very proud that everyone loved it!!! I would make it many times in the future!!!!! The best Coconut cake I have ever had!!! It does not say this in the recipe but it does in the video,,,,,MAKE THE CAKE 2-3 DAYS A HEAD OF TIME....IT WAS SO YUMMY THE NEXT DAY!!!!!

    Moist cake. May consider coconut extract instead of vanilla. I used cake flour and added baking powder and salt (3 c flour, 4 tsp b. powder, 1 tsp. salt. Very good. Definitely a keeper.
