    Don't even think twice about making this recipe, this was the best cake I ever had! Many of my family members said the same thing. The cake was fantastic!

    This was the best cake ever. I made this cake my husband's birthday cake. It came out perfect and my guests and grandchildren loved it. i can't wait to make it again. Thank you paula and jamie for a great recipe

    I have to agree with some of the user's comments about this cake being very dry. After reading comments, i decided to alternate the recipe to try and correct for the dryness, so I can't say if I had made it exactly to the recipe that it would not t have been moist. In the cake preparation,I separated the eggs and only added the yolks in to the batter one at a time.( saving the whites to whip and blend in at the very end. I added the 1 tsp. of vanilla and 1 additional tsp .of coconut extract to the coconut milk and mixed it into the batter alternately as stated with the flour mixture. After the four and milk mixture was incorporated, I folded in the soft whipped egg whites, thinking this would make it more light and fluffy. I am quite surprised this didn't fix the dryness. Also surprised the filling didn't moisten the cake.
    The frosting turned out beautifully and the cake looked gorgeous, but the taste didn't compare to the looks. Will not make this again.

    Made this cake 3 years ago for a day-after-wedding/gift opening barbecue. Everyone LOVED it!! It tasted like a wonderfully rich wedding cake...very moist. I'm wondering if those who found it dry when they baked it used the wrong product for the coconut milk.
    Each year at our local YMCA Sporting Clay Shoot fundraising event, I put up a year's worth of "dessert of the month" at the after dinner auction. This cake is always on that list of 12 desserts and very well received by our winning bidder.

    For Mother's Day, I made this cake and followed the recipe complete. The cake was super dry even with the sour cream filling. When cut a slice of cake, the frosting would fall out. I have made many cakes before this one...even a couple of other coconut cakes. I have not had a cake taste and look as dry as this cake recipe.

    @ Glynis from TN: All that I can say is that you must not have followed the recipe very closely, as I have made this cake at least 6 times in the last 2 years and each time it has come out very moist and delicious. In fact, we have found that this cake becomes more and more moist each day.

    To make a coconut lime cake, I added a bit of lime zest to the cake as well as lime juice and zest to the filling - equally delicious!

    Although the idea of pouring the filling through holes in the cake is a sound one, it still did not help give any moisture into this cake. Will not make again, way too dry!

    My daughter asked for this cake for her birthday. She loves coconut cake and has since she was a little. What she loved was the frosting and the cake was moist and tasty. She thought the filling was ' really, really, really good!". I think that makes it a winner and one to keep in our household.

    I was skeptical about trying it...but it turned out great!The sour cream filling, frosting, everything was good.I used ww flour, only because I don't like enriched and it turned out fine.It took a while though.Personally, I think it turned out great!Just follow the recipe and you won't regret it!

    This cake is AWESOME!!! This is the second time I've made it and it turned out delicious both times!! Follow the directions and make sure to grease the pan properly and it will turn out great!!!
