I made this for Christmas dinner to bring to my parents for the big gathering. I made sure to read a lot of the comments so that I could pick up on tips and opinions. Thank you all by the way. This is amazing! I can't wait to make it again! The cake was so moist and so coconuty. I did add a little coconut extract instead of vanilla. Every other cake will now taste like cardboard!

Throught the years I've realized, I'm not really a fan of cake in general . . . until I had this cake over the holidays. The longer it sets, the better it gets. We had 3 different coconut cakes, and this was by far the best.

Following the directions is key. Using parchment paper helps to the layers out more easily. I was a little confused about filling and assembling the cake and letting it set, but it is definitely a key factor when you make this cake. I think this one is a new family tradition.

I made this cake for a dinner party and it turned out great. I had no problems getting it out of the pan but I also had read the reviews first so I was very generous with the PAM (for baking. I wish the cake were a little more moist but all in all a great recipe. Everyone loved it and the icing was fantastic.

I have made this delicious cake twice. Love the flavor and the beautiful, elegant presentation. For some reason however, this cake tends to be a bit dry. I would love to see this with a nice, moist crumb. I live about a mile above sea level. Could this be an altitude issue? Any thoughts on how to improve the moisture content of this otherwise wonderful cake?

Just made for the 2nd time. For person having trouble getting cakes out of the pan, spray the cake pans with Pam (cooking spray lightly on bottom and sides,
then cut parchment paper (or waxed paper circles and place on top of cooking spray. Be sure to allow 10 min for cake to cool in pans before inverting on racks.

Both times, used double amount of coconut for filling reciipe. Did anyone else need to do this?

Couldn't believe we could put frosting on top of filling on top layer, easy & delicious.

This cake is amazing! Layers are moist and fluffy - they do tend to stick, though, so be sure to butter, line with parchment, butter again, and flour the pans. Makes them pop right out. I also added coconut extract to the cake and filling to kick the coconut flavor up. For those of you who say your cakes are coming out dense - you are most likely using too much flour. The recipe calls for "3 cups sifted flour" which is very different from "3 cups flour, sifted". For this recipe, you must sift the flour first, THEN measure out 3 cups. If you measure first and then sift, you end up using significantly more flour than you should. Try again - you'll be glad you did!

I was always told if I could not say something nice, say nothing. This time I must say something. If the recipe was too dry, maybe you cooked it too long. All ovens are not the same, and you should know your kitchen equiptment. Do blame someone because you are not a baker. As you can see, 99.9 percent of the cooks know how to use this recipe. There is a difference between a cook and a baker. Just happens that the Deen's are both. Have a great day while they smile all the way to the bank.

    A true Deen Fan,

The coconut milk added a strange flavor. First bite was okay but then it became kind of gross.

This cake tastes sooooo good! But I can't EVER get cake out of the pan!! I've made this cake three times and the same thing happens every time. I'm so frustrated. I'm about to make the cake again for the FOURTH time, I think that I might be over beating the batter hopefully it comes out great this time. Any tips would be greatly appreciated.
