just made this for a friend and awsome! i did add 1/2 cup greek yogurt to the cake mix but turned out great. thanks cant wait to make another!

I have been searching for a Coconut Cake recipe that would come close to one of my Aunt's. When she past away, she took the recipe with her. I knew that she used seven minute icing and it had multiple layer's, so when I came across this one I decided to try it. All I can say is that it was great. I shared the cake with my cousin's and they loved it and wanted me to make another one for the Holiday's. It was spot on. I had never made a Coconut Cake before and for this to be my first try, I am so pleased. I did not not have 9 inch pans, I only had 8 inch pans. I devided the batter between four 8 inch pans and it turned out great. Love this recipe, will be making another one very soon.

Like my dear Paula always says: Yum, yum, yum. Easy to make and hard to keep away from. Nice to give as a gift when you are invited for dinner.

I've made this cake 3 times now. First time the cake was too heavy - but I took short cuts on the mixing instructions (didn't cream the butter and sugar as long as the recipe states, didn't alternate ingredients, etc. I followed the recipe to the tee the next time and the cake was perfect, so I guess there's a reason why the mixing instructions are the way they are. 2nd time the frosting was a disaster - grainy and gloppy - but I think what happened there was I used a smaller pan for the double boiler and the water was hitting the bottom of the glass bowl. Didn't have time to mix up another batch, so I had to use an emergency can of vanilla frosting and the cake was STILL great lol. 3rd time was a charm. I only make this at Christmas because it is sinfully sweet. Hands down best coconut cake I've ever had.

I'm not a big fan of 7 minute frosting, however this cake is still very good. Word of caution...DO NOT STICK TOOTHPICKS INTO YOUR CAKE. Never, ever use something inside the cake that isn't edible and is liable to hurt someone! I really can't believe the directions have that in there. If your layers are properly leveled then you shouldn't need anything to stabilize them. On the off chance that you do then use long wooden skewers through all 3 layers (cut off flush with the top layer so they'll be easier seen and eaten around, not eaten by mistake!

Awful! Unlike others' who have commented; my cake came out moist, but when you add the "filling" and then the (marshmellow texture frosting, it became a soupy mess! Gross! Huge waste of my time and ingredients!

This cake was easy to make and tasted wonderful!!! I used a different frosting but I'm going to try it as written. I made tihs one Easter, as a bunny cake, the kids loved it!!!

This cake is super delicious!After reading some of the comments, I did reduce the sugar in the frosting by 1/2 cup. I also didn't go the whole 7 minutes because I got tired. However, I did for about 4 minutes and it turned out good. I let the frosting cool down a bit and it thickened enough to spread it. As for the cake, it was very moist and came out in one piece. I followed this part of the recipe without making any modifications. I do absolutely recommend it this recipe. I think next time I might try toasted coconut. Yum!
