    I made this cake for my husband's birthday and I have to tell you all that this was by far the most incredibly delicious cake I've ever eaten and certainly that I've ever made!! The 7 minute frosting was a bit of a chore but so worth it. No one could stop complementing me! I love to cook, love to bake, and with the help of the foodnetwork I am SOOOOO expanding my horizons!

    It's a beautiful cake, and tasted yummy,but it took several tries to make the icing. Even the last attempt tasted too much like egg whites. It wasnt the best icing, didnt match up to the cake. Over all ,great recipe!

    This cake is delicious. I can't find a complaint and haven't had any. I baked it too long the second time around and it is still yummy. If this cake did not come out right for you, you did something wrong. I used the all-purpose flour w. 2 tsp baking powder as another reviewer suggested. I couldn't find the cocount essence to increase the coconut flavor but it was still great. Didn't try the filling and used store bought icing. First time I did pineapple filling, second time pineapple and strawberry filling. Just ate it. Better than the store ones I buy so I will be making this from now on for Birthdays and such.

    I made this recipe the other day for a family reunion and I've been getting several requests for the recipe. I have to admit, I did make some changes though.
    I don't have a double boiler, so I didn't use the frosting part of the recipe. Instead I made a simple frosting of powdered sugar, shortening, milk and one part each of pure vanilla, almond extract, and coconut extract.
    The filling turned out really runny, so I added coconut until it wasn't runny anymore. Also, I didn't have self-rising flour, so I did a search online and found the equivalent substitute was to add 1 1/2 teaspoon baking powder and 1/2 teaspoon salt to every one cup of all-purpose flour. That worked great. The cake was just fine.
    Also, not sure if it matters, but I used Lite coconut milk.
    It was a huge hit though, and the recipe is definitely a keeper.

    This cake was so good! I don't bake a lot but decided to try this cake and it wasn't hard to make at all. I followed other peoples advice to add coconut extract and it was delicious! It was very moist and the icing was amazing! I recommend this recipe to anyone!

    This cake is FANTASTIC!!! I've made it three times and it has turned out beautifully each time. I serve with fresh raspberries and strawberries.

    For those having difficulty with the frosting, the key is to beat the frosting on HIGH speed for SEVEN minutes. If you don't use the highest speed on your mixer for seven minutes your frosting will be runny.

    I have made this cake on numerous occasions, and everyones LOVES it! I read all the reviews, and those who gave it poor ratings may not have followed directions... Make sure to use self-rising flour. Cake will be flat if you don't...Make sure beaters, bowl and egg whites have NO fat in/on them, they need to be very clean, even a little egg yolk will not allow the egg whites to get thick... And do not let the boiling water touch the bottom of the double boiler, the sugar will crystalize, causing it to be crunchy. Hope this helps...Happy baking everyone!

    I made the cake on the spur of the moment so had to substitute a few things I did not have on hand. I used buttermilk instead of coconut milk and added 1/2 tsp coconut extract. The batter tasted yummy though! I made the frosting as described but must have done something wrong, maybe too much water in the double boiler?. It came out runny so I fixed it with butter and powdered sugar. I also frosted it without waiting. It is soaking right now, I plan on cutting it tomorrow and will check back in.

    This cake was a huge hit with my family! I would definitely use a stand mixer if you have one since the mixing time is so long. My frosting turned out a little thin so I will have to give that another try. I love the idea of serving a raspberry sauce with it! I will be making it again very soon if my family has anything to say about it.
