I've been looking for this traditional coconut cake recipe and I knew this was the ?one? when I read about the sour cream filling (sounds odd but, it's wonderful I recommend this cake for any occasion. It's very moist and light all at the same time. My family loves it!

I fixed this cake and it was delicious. I fixed it for a friend's stepmother and left the flaked coconut off. My friend recognised the icing as cooked and said it was the best coconot cake she ever ate. My friend hates coconut and ate two pices. There is food and then there is Paula's food.

Well,my batter was very thick. I added a little bit more coconut milk. The batter didn't even fill 8 inch pans half way.
My layers came out more like big cookies. I'm glad I made extra filling and I poked as many holes as I could because they are so dry.
I still have the frosting left.
I don't know what happened. I measured and everything.
Sad because it's my husband's BD cake.
Oh well. I hope that at least it tastes good.

I love Paula's recipes! However very disappointed with this one.
I did a test run of this cake (no filling and no icing last night for Father's Day. The cake came out beautiful but lacked coconut flavor.
Perhaps I didn't use the right coconut milk? I used the thai coconut milk that has all the fat on top when you open. I thought maybe using Coco Lopez but I think that would have made the cake super sweet since it calls for 2 cups sugar.
I purchased from King Arthur's website some concentrated coconut flavoring and hope it will arrive shortly.
I want to serve coconut cake with some pineapple curd for my dad!

This cake was wonderful! My mother for twenty-six years has been trying to find a coconut cake that tastes like the ones her grandmother used to make....and this one she said was not only like her grandmother's, but better! Way to go Paula! I will note though, that I did not use the sour cream filling, I just used the icing as filling.

I made this cake for the first time for a doctor I work for who longed for a 7 minute frosting. It turned out to be a great hit with everyone. Thanks for the fab recipes Paula!!!!

I thought this cake was really good, however I read some of the previous reviews and made some adjustments. I added imitation coconut flavoring to the frosting (and tinted it pink for Easter!. The filling had a different flavor with the sour cream, but seemed to taste alright with the cake after being refridgerated overnight. Next time I will probably sweeten the filling a little more as it was a bit sour for my taste. I served it for Easter dessert and everybody really liked it.
