This cake is absolutely delicious, my daughter does not eat cakes or cookies, but when I made this cake she loved it, that's the cake she asked for her birthday. We love Paula!!!!!!

I tried this recipe without having seen the episode and let me tell you it helps to see it before you make it. As someone mentioned it lacks coconut flavor so if you're making this for a huge fan of coconut it might be a little weak in the coconut flavor department. Make sure you poke A LOT of holes all over the cakes to the filling can absorb. What the recipe does not say, but what Paula mentions in the episode, is that she lets the cakes sit with the filling for a couple of days to soak in the fridge. That bit of info might have been a little more helpful especially since my cake was a tad bit dry. The frosting I didn't care for too much but you can always make a different one. Now that I've seen the episode I will probably try this cake again with a few minor changes and hopefully it will work out well.

This was my first time trying to make this cake. Since so many people in my family and among friend love cocnut cake, I decided to give it a try. And boy, did everyone loved it! About 10 people tried the same cake and have since requested it.
There were some different things I did for this cake. I separated the egg yolks from the egg whites & beat the egg whites till stiff with an electric handheld mixer and incorporated with the batter. I did this to make the actually cake lighter and fluffier. And I did not let the cake stand for 3 days before frosting, only 1 full day (which I thought was good enough.
But this cake is highly recommended even with no changes with the recipe!

The cake was good, but the filling was too runny to even put of the cake. My daughter made this for my birthday and went to alot of trouble to make me this cake.

My hubby made this for my birthday, and it was wonderful! The cake was moist and the filling and frosting were delicious! I can't wait to make it again!

The only problem was that I live at high altitude, and the cake fell -- but no one cared because it was so good! I'll try some high altitude corrections, because Ill definitely make it again.

What a fabulous recipe! I make a lot of cakes from scratch, however most tend to be expensive and time consuming to make. However,this coconut cake recipe calls for ingredients I like to call "real people ingredients" (stuff most of us can pronounce and have in our pantries and is not at all complicated to make The seven minute frosting is fun and easy to make, and is ooohhh so good. My friends and family loved it, and I will be sure to add this to my favorite recipe collection!

This cake looked beautiful, but looks can be deceiving. The cake part was not as coconut flavored as everyone hoped but at least it was okay. The "filling" was a bit odd tasting and the sour cream gave it enough tang to make everyone wonder if the milk I used was bad. Nice. The frosting was super sweet and more crunchy and stiff than creamy and smooth. After everyone had a slice of this giant cake I threw the rest out.... no one wanted anymore. I guess I will keep looking for a really good coconut cake recipe.
