    I am one of those people who always think they can improve the existing recipe... one of those people who say "it would be perfect if.." however, this cake....this cake is beyond amazing. The icing is perfectly tasting and very bouncy. I love it. My roommate's friends said: "do you know what is wrong with this cake?" and they all answered: "NOTHING"....and I? I would not change anything!

    My southern dad asked for a 3 layer coconut cake for a Labor Day BBQ, so I found this recipe. IT WAS AWESOME!!!! I don't particularly care for coconut, but I loved this. I read some of the reviews prior to starting it, so I saw the complaiints about the filling being thin. I merely put a couple teaspoons of cornstarch in it. The cake was moist, flavorful and creamy. Yes, it was a lot of work to make the cake, the filling AND the icing; hoowever, I would DEFINITELY make it again.

    the cake was wonderful, the frosting was good. but the filling ran all down the sides of the cake and did not stay. filling should be thick. This was like milk. not sure what i did wrong.

    It took forever to make and created a lot of cleanup but according to both my sons, my neighbors, and my husband - the best cake ever. Moist - flavorful - gorgeous - it really is ALL THAT. I am making it again today by request and am making 3 cakes at once to fill requests. If I could find a way to add chocolate - to address my chocolate addiction - I'd gain 100 pounds and eat this non-stop.

    Made this for 4th of July Birthday celebration. great texture sugary quality to cake. Very moist. I made the cakes on Wednesday, put syrup on and wrapped in saran wrap, put in refrigerator and then put together on Sunday. I was so worried that it would be dry because of the comments. The family wants me to make it on Thanksgiving now! Thank you, Deen family :

    I made this cake for Mother's Day and it was a huge hit! It was a little time consuming, but worth every second! Moist and delicious! I will definitely make this again! I agree with the comment, even better the next day!

    The key to making sure the cake is moist is to let it sit a day or two with the filling before icing it. I made the cake for a work get-together and people were literally scraping the leftover crumbs onto their plates to get a taste! I made it again for my father's birthday and he did mention it was "heavy" like his grandmother's cakes were. This cake is not like a fluffy box cake. It's texture is more like a pound cake. You can make it fluffy by using a chiffon technique in conjunction with Paula's butter cake technique.     This is the first recipe of Paula's that I have ever tried and not liked - and I've tried lots of them. The cake was awful - heavy and bland. I followed the recipe exactly. Don't waste your time and ingredients on this one. Buy a french vanilla cake mix, cover in butter cream frosting, and top it with coconut. It's a great coconut cake.

    I dont know about the cake because I used a betty crocker French Vanilla cake instead, and the cake turned out great. The sourcream filling had a cheese cake flavor, so good. The frositng came out great, I didnt find it to be too sweet, and I found it improved with age! Im making the cake again for my sons birthday party and am going to save $60.00 over the store bought cake, thats how good this is!
