    I made this recipe for the first time on yesterday. I have never made a coconut cake before, so I trusted Food Network to help me out. I came across this recipe. I read all of the rave reviews and couldn't resist at least trying it. This cake turned out so GOOD and MOIST! I am eating a piece right now and it tastes even better today. The only thing that I would recommend is using unsalted butter because of the self-rising flour. Other than that I will be adding this recipe to my recipe box.

    Coconut lovers, this is your cake! I've made it tons of times now and it's always great. Make a day in advance and refrigerate, it is so much more delicious when chilled. I like to make it for Easter, and use food coloring to color the coconut for the exterior of the cake to look like Easter grass. It's very pretty, and impressive looking.

    Don't bother looking any further and don't cheat yourself by using a boxed cake mix. This cake came out perfectly. I cannot explain the reviews with a low rating or those who had issues. This was not difficult to make and came out perfectly, I think I said that already. PERFECT!

    When I saw this recipe on air maybe 3 or 4 years ago, Paula said that after you assemble it to put it in the refrigerator for 2-3 days before frosting/serving. I assemble it and cover it, stick it in the fridge, and then I wait at least one and a half days before I take it out and make the frosting. If you do that, it's perfect! It's also a great cake to make for a party because of this reason, because you can make it ahead of time no problem. YUM! I also suggest making this as a holiday gift for someone you know is having company for a large crowd :

    i'd recommend unsweetened coconut, and cutting back on some of the sugar in the recipe. everyone at the party liked it, but almost everyone commented on how sweet it was. i loved how the filling soaked into the different layers after poking the holes in each layer - it made it a very moist and dense cake.

    I tried the cake right after assembling it and frosting it and was disappointed...it seemed so dry. I tried it again the next morning and realized that it just takes a little while for the cake to absorb the filling...and boy was it good. Very delicious cake!!

    I wanted to try something new, & for my first time making this cake it came out better than what thought! I read other comments & reviews to give me an idea of what I was dealing with. The most I got from them was that the cake was dry. It is most certainly NOT. If you follow this recipe to the tee you will be fine. Watch your oven because if you over bake it will feel dry. Every oven does not heat or work the same, you may not have to bake it a full 30 min. With a few minor personal ajustments & some food coloring to the frosting it came out great. I would for sure make it again!
    P.S. Use quality products it makes a big differance! No substitutes. k bye:

    This was the first cake i've ever made and it was perfect. If you follow the instructions it will be a PERFECT cake it was nice and moist and delicious!!!!!
    And i'm 17 so if i can do it , so can you .. i made it for my mothers bday and she was ecstatic. Great recipe

    I made this cake for my husband's birthday. In addition to the suggested filling, I piped lemon curd in between the layers also. It added a great tropical flavor and tang and also served to keep the layers from sliding apart from each other. I didn't like the suggestion to hold the layers together with toothpicks! Lime curd would also be really good I'm sure. A couple reviewers said the cake was dry. My guess is they didn't use the suggesting filling because this was one of the moistest cakes I ever made. Yum!

    I made this cake for an anniversary party and everyone loved it! My oven cooks high so I couldn't cook the cakes as long. I added coconut flavoring to the cake batter before baking. I also added a little pina colada mix to the filling. The filling is so yummy that a meat syringe might work better to make sure it is in every bite!
