    I mad this cake for a co-worker who got a promotion at work. I added almond extract, and let me just tell you, just fantastic. I look forward to making it again.
    Make sure that you follow the recipe as written, and it will be perfect.

    I used the Coconut Cake recipe from Ina Garten, but I used the filling and frosting from this recipe. The filling was great, not too sweet. And the frosting was light, fluffy and sweet...it was a perfect balance!

    This cake is on the money!! I made Jamie's Coconut Cake for Mother's Day for my family and everyone loved, loved, loved it.
    The cake is moist, with a great aroma and taste of coconut on every bite.
    My sister had mentioned trying to make it into cupcakes. I think that would be fantastic also.

    If you are looking for a new dessert or just looking for a Coconut cake recipe, you can't go wrong with this.

    This was the BEST cake I ever made! I don't know why so many people said their cakes turned out dry and hard. Mine turned out amazingly moist and it had the best texture. Perhaps they over-mixed their batter or baked it for too long. I don't know, all I know is I didn't have that problem. Mine turned out wonderfully moist. I will definitely make this cake again and again and again. My family just raved about it. Everything about it was perfect: the cake was moist and delicious (just a hint of coconut in the cake, the filling wasn't too sweet and the sour cream flavor complemented the sweet icing perfectly, and the icing was light and fluffy and dreamy. I'm not kidding when I say this was the best cake I ever made!!!!!

    The Seven-minute frosting turned out to have the taste and consistency of marshmallow. Interesting. A little sweet for me, and had I known I might have tried to substitute a buttercream or creamcheese icing. The sour-cream filling is excellent and takes the edge off the sweetness. I tried baking in two pans: a mistake. By the time the center was done the outside was a bit too crispy. Split in to at least three, as the recipe indicates.

    Made this over the weekend and couldn't wait to see how it came out. Well, after reading some of the other comments, I must say it was a bit on the dry side. The frosting was wonderful, though. I think the cake could have been a bit more moist. It was okay but I have tasted better coconut cakes. Will look for other similiar recipes to try and compare.

    I knew I wanted to make a Coconut cake for our Easter Lunch and this recipe was really a hit! I think the filling could be used in some other recipes too. Definately a keeper that'll be made again and again. Thanks Paula!!!

    I had high hopes for this recipe. It wasn't terrible, but definitely wasn't 5 stars to me. I followed the recipe to a "T" and even added a little extra filling after being warned by my neighbor that the cake was dry. However, it still ended up pretty dry. It was ok, but don't think I'll make it again...

    I came onto Food Network looking for a cake with coconut that I could alter to make my own. The first time I tried the recipe I added lemon zest to the coconut milk filing and to the top of the cake. The bright yellow gave the cake a little POP, but in appearance and taste!

    The second time I made this cake, I stuck to the recipe and my family LOVED it! I expected the filling and frosting to be really sweet, but it was surprisingly not. And my family is not big on coconut flakes and they ATE IT UP!
