I live for dessert and I am eating my cheesecake as I write this and it is just awesome. I'm a "Low Carber" so I used Splenda. For the crust, I used sugar free vanilla wafers and instead of topping it with lemon curd, I sliced up some strawberries and mixed them in about a half cup of Smuckers Sugar free Strawberry preserves that I melted in the microwave. After beautifully laying out the glazed strawberries on top of my cheesecake, I sprayed some 0 Carbs Heavy Whipped Cream by Land-O-Lakes around the edge. This cheesecake is so rich, creamy and delicious, it is hard to believe that it is virtually fat free and carbless. Thank you Joanne and Paula. This is the absolute BEST.

EXCELLENT CHEESECAKE!!!! BUT WHY NOT LIST THE NUTRITIONAL VALUE ON THE RECIPE, SINCE IT IS CONSIDERED A "HEALTHY" DESERT (i.e. fat, fiber, cal., etc.

It has a great taste great anyone like myself who is on a low carb diet. Besides I love the taste of lemon anyway, and cheesecake.

Best 'light' cheesecake I've ever tasted. It's creamy and very lemony! My 'cheesecake expert' son made it and declared it wonderful!
