Kentucky Colonel Barbecue Pork Chops

Ingredients

  • 2 1/2 cups water
  • 2 tablespoons brown sugar
  • 2 tablespoons oil
  • 1/4 cup vinegar
  • 2 1/2 teaspoons salt
  • 1/4 cup chopped onion or 2 tablespoons onion powder
  • 2 1/2 teaspoons black pepper
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • 2 teaspoons chili powder
  • 1/2 teaspoons hot pepper sauce
  • 1/2 teaspoons red pepper
  • 1 clove garlic or 1 tablespoon powdered garlic
  • 10 (1-inch thick) pork chops

Directions

Combine all ingredients except for the pork chops and bring to a rolling boil. Remove from the heat and cool. Refrigerate sauce overnight to blend flavors.

Heat a grill to medium-high heat.

Apply sauce to chops with dish mop or paint brush. Grill to desired doneness, about 5 minutes per side for medium-well. Baste with sauce each time they are turned.

    I cut the water to 1 cup. Marinated the chops for 2 hours in the fridge in a ziploc with about 1/3 of the sauce. And... constantly basted with remaining sauce while grilling. These were the most moist, flavorful chops I've ever had! Will be making again!Read more

    Tired of the same old pork chop?

    I am so tired of trying to make pork chops taste like something, but this recipe really does the job. I used thick-cut... boneless loin chops, and let them marinate in a little oil, salt and pepper while I cooked the sauce. I cut the water down to 1 cup, and let the sauce cool to luke-warm and it thickened quite a bit. I cooked the chops low-and-slow on my gas grill, turning every few minutes and brushing on the sauce, for about 30 minutes total. My son said, "this is the best pork chop I have ever eaten!" If you have ever been to a KY Colonel BBQ, the KY State Fair, or a sporting event where the Pork Producers have a concession, you will recognize this taste!Read more

    Need a real mop!

    You do need a real mop to use this sauce. It is so wet it just falls off the pork chop. Definitely take everyones advice... and thicken this before you use it.Read more

    I do agree with other reviews about the water. I substitured 1 cup of good chicken stock instead of water. I used all other... ingredients as indicated but simmered the sauce down by 1/2 to make it a bit thicker. At the end I tossed in 2 tablespoons of chopped fresh oregano (dry would be good too). I can see using this on chicken as well. Excellent sauce! Thank you!Read more

    After reading the other reviews of how thin and runny the sauce was, I cut back the water to only 3/4 of a cup, and it was... perfect. This sauce had a wonderful flavor, stuck to the chops really well. My husbands only complaint was I didn't fix more!Read more

    This was my first sauce of the vinegar and pepper variety, and I have to say how easy it was to make! If you don't have time... to let the flavors mingle overnight, I suggest opting for the powdered onion and garlic instead of using fresh... You will get all the flavor in a short amount of time.
