Chill your mixing bowl and beaters, in the freezer, for 30 minutes before you start on the whipping cream. It will whip up better. Hope that helps

I've made this recipe two times. Both times it never reached the consistency needed. It was very tasty, but I'm not sure what else to do in order to make sure it whips correctly. very disappointed

Don't let the negative reviews put you off. If you do NOT want a frozen dessert, DON'T use this recipe. If you can't follow directions, DON'T expect the recipe to turn out. And if you DON'T put this in the freezer, or move it to the fridge after a few hours, DON'T expect to have a FROZEN key lime pie! Would you store your ice cream in the fridge??? This recipe is awesome, and when made correctly, it's fantastic!

i'm surprised MOST reviewers didn't get this recipe is NOT a traditional key lime pie (the title is misleading, but it DOES say FREEZE it, so you can tell it's not a traditional key lime pie just from THAT! since you FREEZE it, it comes out like ice cream and you keep it in the freezer until just before serving (refreeze leftovers. someone mentioned adding egg yolks, but seeing as the filling DOES NOT get cooked, i don't see how you'd want to eat RAW eggs. some people mentioned the cook time was off, and that it took way longer than 8 minutes to juice 20 tiny key limes. it says 8 minutes COOK time, not PREP time. it takes only 8 MINUTES to BAKE/COOK the pie crust! this is an ice cream pie and not a traditional key lime pie, it's a FROZEN dessert, so obviously it won't set up like a custard pie, and obviously it will melt when thawed!

This is a "Frozen Key Lime Pie". Paula defenatialy says that on her show aired on March 11,2011. At 6pm.EST. I have not made this yet, but I do plan to do so this week for my Mother's 80th Birthday Party this month on the 17th. A St. Patrick Day party!!! I know that it will be the most delicious FROZEN Key Lime Pie ever!!! Thanks Paula!!

I agree this is not a traditional Key Lime Pie recipe after checking on it six hours later in the freezer, it is still not firm enough to cut. So I just decided to leave it in the freezer over night and hope for the best in the morning. It does look like this is a frozen desert, next time I think I will try another recipe.

Watched the show today and this is a FROZEN key lime pie. Can't remember exactly what Paula called it on the show, but it's NOT the traditional Key Lime Pie. It is a FROZEN dessert. As for the other issues noted, I'm going to give it a try as well, and I'll let you know how mine turns out.

Well...it tasted good, BUT: It does not set up properly (I followed the directions exactly and used a stand mixer, and NEVER got peaks of any kind at any step and results in a food that must be eaten straight out of the freezer. This is not Key Lime Pie, the title is incredibly misleading.
