This recipe was not only easy to follow, but also easy to substitute. Like many other reviewers, I had a lot of trouble locating the lime cooler cookies, so I just bought some Nilla wafers, mixed in some butter sugar and pressed them into the cups and voila! I will definitely be making these again very soon.

I HAVE HAD THIS RECIPE SINCE PAULA FIRST MADE IT, BUT LIKE EVERYONE, I WANTED THE REAL KEY LIME COOLER COOKIES. JUST BOUGHT THEM @ OF ALL PLACES, PIER 1. I LOVE KEY LIME, & MAKE THE PIE FREQUENTLY. I ALSO HAVE A MINI CHEESCAKE TIN----LIKE A MINI MUFFIN TIN WITH PUSH UP BOTTOMS---LIKE A SPRINGFORM. WILL TRY USING THE NEXT TIME SO AS NOT TO HAVE TO USE PAM/PAPERS.
ALSO, YOU CAN BUY NELLIE & JOE'S KEY LIME JUICE IN THE FOOD STORE.
    INCREDIBLY DEEEEEEEEEEEEEEELICIOUS!

I used Target's Archer Farms Key Lime Cookie Straws. They are exactly like the key lime cooler cookies except they are long instead of round like cookies. I crushed the whole bag between waxed paper using a rolling pin, added approx. 1/3 stick of melted margarine and then pressed them into the muffin cups. It worked great!

These are one of the most delicious desserts I've tasted yet. The only thing is, they come out a bit watery (at least for me so I'd make them a day in advance and refrigerate them. Yum!

Made these for an appetizer party along with Paula's "Shrimp Salad in Phyllo Cups". These tarts were so so good. People raved and had more than one. I made them with fat free cream cheese and fat free cool whip. I couldn't find any key lime cookies - so I did what another reviewer did and added some lime juice and zest to a ready made sugar cookie dough. Also - didn't have a mini muffin pan so just just the regular and made 12 large tarts. (The Shrimp Salad was also a huge hit

I hosted a Margaritaville party for my boyfriend's 30th birthday and what's Margaritaville and Key West without Key Lime Pie?? Soooo, I made these tarts and they were absolutely fabulous! And for those of you who can't find the Key Lime Coolers, I found the perfect substitute: Key Lime Twists from Target. I crushed them up, mixed them with a tad bit of melted butter to hold the crumbs together (like you would do a graham cracker crust and smashed them into the bottom of the cupcake paper. Perfecto!

I love to make these little tarts for potlucks and BBQ's on the beach because they are so easy to make and are usually the first thing to get eaten up. I couldn't find the key lime cookies listed in the recipe, so I just use mini nilla wafers instead and it works out great. Sometimes I find key lime desserts to be a little too tart, but I didn't find that at all with this recipe. Overall a great recipe!
