After searching all over for the key lime coolers, I finally found them at a small kitchen store for a BIG price. The tarts were wonderful though.
However, the other times that I've made these, I used a graham cracker mixture instead of the cooler and they are equally delicious! (No need to bake the crust before you fill them - bake them all at once.
AND PLEASE use Key Limes. It makes all the difference in the world.

We have enjoyed these Key Lime Cooler cookies for years since we discovered them in a gift shop on Jekyll Island, Georgia. Planning a trip to Jekyll and then up to Pennsylvania for a birthday celebration we incorporated this recipe into the menu for the birthday celebration. Very easy to make and everyone raved about the taste. They weren't as pretty as Paula's but we disguised them with the whipped topping.

OMG!!!! So Good!!!!! These things barely made it to the picinic. I could not stop eating them. I could have sat and ate every single one. I could not find the lime cookies though so I used nilla wafers and made a crust in the bottom of each mini tin. Perfect!!

These tarts are SO good!! I have made them several times for parties and special occasions. Everyone loves them! I do change the recipe slightly by using mini graham cracker crusts (the recipe makes approx. 8 tarts and then baking them a little longer...20-22 minutes

This was an easy, elegant and delicious recipe. I decided to make these last-minute, so I didn't have time to order cookies from Byrd. I did, however, find delicious key lime and white chocolate chip cookies that were the size of vanilla wafers and they worked perfectly in regular-sized muffin tins (I just increased the baking time to about 16 minutes. The cookies were by Immaculate Baking Co. and were called Key Largo Lime. They were $2.99 for a 7 oz. package -- about 30 cookies.
I didn't have any foil liners, so used paper liners, but per the tips of other reviewers, I spread heavily with Bakers Joy and put them into the freezer after they cooled a bit. They released from the liners beautifully. Thanks, Paula!
