These are the best! I order several tins of the cookies from Amazon.com and keep them on hand, but have recently found them at several gourmet food stores. SPRAY the liners well, these have a tendency to stick to the paper.

I made these last night and learned it is not a good idea to try these if you do not have the paper liners. Even in the non-stick pans they didn't come out well and didn't look so great. But the good news was they still tasted great, and they were VERY easy to make.

Couldn't find coolers so adapted with key lime white chocolate chip cookies that I broke into small pieces. Met with rave reviews on two occasions. Quick and easy to make.

beware of byrd cookie company. I had the most awful customer service from them. But the tarts were good.

I used girl scout lemon cookies, as I couldn't find the lime coolers. I also used regular sized cupcake pan. They were not set enough. I wouldn't go to the trouble to try these again even if I could find the lime cooler cookies

These were so good and easy. I found key lime cookies that only fit in the regular muffin pan and they turned out well. I even tried pecan sandies, but they didn't do as well as the key lime cookies. Will make again and again.
