    I used half the filling with lemon semolina cookies for the base. I used some homemade ginger cookies from my freezer for the remaining tarts. Simply processed the cookies with some melted butter to make a crumb crust - Great combination of flavors. Friends preferred the ginger cookie crust!

    I made these cookies twice. I was able to find the Key Lime Cookies and on the first trial I completed the recipe exactly as written. They were pretty good, but I prefer a little more "crust" in my tarts. Since these cookies were so quick and easy to make I immediately tried them a second time with alterations. First of all, I doubled the number of key lime cookies and put them in the processor with 2 TBSP of butter. I placed about 1+ tsp of the crust mix into the bottom of the sprayed paper liner and pressed it down until it was a firm crust. Then I baked the crusts for about 7 minutes and let them cool. I doubled the filling ingredients and spooned the filling into the crusts all the way to the top and baked them. When they were cooled I sprayed a "floret" of RediWhip on top and decorated with mini mint leaves. These tarts are especially good when they are very cold. They are quick, simple, refreshing, & delicious. I will definitley make these again

    Excellent tarts!! I make the filling and put it in mini graham crackers crust to make individualized pies.....helps me with serving sizes for my late night snack! LOL

    I just made a dozen of these for my husband and I.... WHoops, we ate them in 24 hours!! They are REALLY good if you place them in the fridge overnight. Just like a cheese cake! Cookies I found were H.T. Traders (Harris Teeter brand White Chocolate/Key Lime flavored.

    I made these for the first time last year for my husband's birthday party.....everyone at the party raved about them and asked me for the recipe. (Thanks Paula! I have made them MANY times since then, always with the same great response. I also could not find those specific cookies, so I have made them with both the vanilla wafers and a graham cracker type crust. I prefer the graham cracker crust. I always double the recipe because they go so fast.......and I usually just leave off the whipped topping (especially when entertaining outside and grate some key lime (or reg. lime zest right over the top of them! This recipe is a keeper!

    These tarts are so easy to do,,,,, I substituted the specialty lime cookies for Nilla Wafers & they worked great!

    These are absolutely wonderful. Make sure you spray the paper liners or they will definitely stick. I couldn't find the cooler cookies so I use Danish wedding cookies. I am ALWAYS asked to bring these to every event.

    Absolutely delicious I made them once for work and am now expected to make them each time we do something special. I can't find the cookies, so I take pre-made sugar cookie dough & add lime zest & juice work it through the dough then just bake the cookies as directed, make sure they are really small though (it works great. Also I add a lot more zest & some more juice since I love tart things. Thanks Paula great recipe
