I read a lot of the reviews before making this recipe and I saw a lot of complaints that it was lumpy and bland so I tweaked like so:
I coated the bottom of the dish with butter and breadcrumbs (in lieu of stuffing mix b/c I find stuffing mix to be way too salty. To the cream of chicken mixture I added onion powder, salt, pepper and garlic to taste in addition to the 1/4 cup of wine. I seasoned the chicken with salt and pepper to taste and a sprinkle of thyme. I think the blandness for most people came from unseasoned chicken.
Once the dish was done I removed the chicken and stirred the sauce in the casserole dish until combined and what I ended up with was an insanely delicious, creamy white wine butter sauce with bits of bread crumb and cheese. I placed the chicken on top of rice and poured the sauce from the casserole over it. My husband wants to know when I'm making it again and truth be told, I can't wait either!

This was a tasty, very easy change of pace for a weeknight dinner with kids. I like to substitute a home-made version of the "condensed/cream of" soup for this and other recipes: melt 4 tbsp. unsalted butter in a saucepan, add 1/4 cup flour, 1/2 tsp salt and 1/4 tsp pepper, whisk over medium heat until smooth & bubbly. Whisk in 1 cup warm chicken broth, bring to boil, reduce heat & continue to whisk until thickened. This can be done ahead & kept in fridge until ready to use and can be substituted for 1 can condensed cream of chicken soup.

I made this for my honey and I and he is not a cream of anything kind of man but, he just loved this dish and went for seconds. So, I decided to make it again when I was making a dish for a friends party and boy was it a hit....all the ladies wanted the recipe. Thanks so much Paula this recipe is a keeper!

delicious but next time I will not add the extra salt to the chicken .. mine came out too salty.
