    I tried these out last night and they were OK. To me, a lemon bar should be light and refreshing and these were surprisingly rich. I did have to add an additional stick of butter for the crust, and it seemed like there was too much crust for an 8x8 pan. The filling was a little too sweet and not enough "lemon". If I make them again, I'm going to play around with the recipe- less crust, more lemon.

    If you use 1 stick of butter, you will not have enough moisture to form a pressable crust. Use the formula in Paula's cookbook which calls for TWO sticks of butter and FOUR eggs, not 2 eggs as listed on the web site. Other measurements are correct.

    Paula's recipes are usually fool proof, however something isn't quite right and I'm thinking too much flour and not enough butter. I am going to use the recipe in her cook book to see if that one comes out better.

    I picked this recipe because I KNEW it would turn out well. I was terribly dissapointed. I followed the online directions to the letter and they still turned out crusty on the top and bottom and runny in the middle. The flavor wasn't even good.

    I just made these before I read the reviews (what was I thinking. Anyway, I realized right away that the crust needed more butter. I added another 3/4 of a stick. However, it is too much crust for an 8 x 8 inch pan. The crust has the right texture, but it is too thick.

    If you use this recipe, be sure to add butter and either use a larger pan or use less of the crust in the smaller 8 x 8 pan.

    The filling is very good. I used a little less sugar and added some lemon zest.

    They are good, but they could be better.
