    This recipe was very easy to make (my nine year old did almost all the work and they turned out great. I should mention that, as per previous recommendations,I used two sticks of butter instead of just one. It made a wonderful shortbread-like crust. Not hard at all. So don't give up on the recipe if you've read the reviews about the hard crust, just use another stick of butter.

    I have been a fan of Paula Deen for several years and find myself trying her recipes often. My husband is not a big fan of sweets, but he loves anything with lemon in it. I thought I would give these a try to see how they worked out.

    First of all, anytime I can make a recipe without having to go to the store is a good thing. There was almost no prep time needed and the recipe was extremely easy to follow. The best part of it all was they came out of the oven looking just like the ones that I watched Paula make on her show, and they tasted wonderful. My husband loved them, and has asked for me to keep this recipe so he can enjoy these again.

    I hope that Paula's show continues for many years to come. From one southern gal to another, Paula, you are the best!

    i'm not much of a dessert person, but i thought my husband would like this, so i made it and they are so incredibly yummy...i guess i'm becoming a "sweet tooth"....the next time i make it though, i would probably cut the sugar to 1 cup for the filling, instead of two cups...it was just alittle too sweet for me.

    The orginal recipe in her cookbook called for 2 sticks of butter. This may be why some users didn't like the crust.
