Just finished making this recipe. Turned out great! No problem with the batter sticking to the pan. I did use the PAM baking spray (the one with flour in it. My husband isn't a big lemon fan so I did not add the lemon juice or zest in the glaze. Instead I just increased the water. Sort of reminds me of those glazed donut holes. If you don't already own a flat whisk you really should get one. (found at Williams-Sonoma Made dipping, turning, and placing mini cupcakes on the cooling rack super easy and non-messy.

These cakes are a hit! The icing is a bit messy but sooo worth it! I had dyslexic moment and bought a lemon cake and vanilla pudding. Still awesome~

Has become a hit with family.Sparay works well.
Fill pan easily and quickly by using small "Zip-it" plastic bag, cutting small amount of corner to pipe into mini muffin pan equally, 1/2 full only.

FABULOUS FABULOUS FABULOUS. I used nonstick pans and sprayed the pans as well with PAM. They popped out of the pan like popcorn when I turned the pan over. My family loved them. I will definately make them again this week for another function. I didn't use all the lemon juice as stated and increased the water in the glaze and they still had a great lemon flavor. Yes the batter is thick but they turned out FABULOUS.

Very good - came out great and everyone loved them! Sprayed the muffin tin throughly with cooking spray, waited 2-3 minutes before turning out onto tea towel after baking, and they slid right out with no mess. Be careful not to overfill cups - I noticed on my first batch that the cups I'd filled more needed 2 more minutes of baking time. If I'd taken them out at 12 minutes as directed, they would have been underdone and probably would have stuck or fallen apart. Plus, the smaller they are, the cuter they turn out!

I have to agree with the last couple reviews....tried this thinking it was a home run based on the 100 of reviews and 5 star rating...never again! big mess for no reason...hard to get out of pan even, sticky batter...some sunken middles. and not a great taste...lemon not really my thing i guess. overall big dissapointment...don't let the ratings fool you. if you really want to try it half the recipe...i'm throwing all of mine out unfortunately.

I halved the recipe because I just wanted to test it out...other than that I followed the recipe EXACTLY. The batter was really thick and hard to work with. Then after I took them out of the oven they fell. ICKY.

The first few times I made these, they were amazing. However, the last two times, the batter has turned out so thick it was nearly impossible to work with. Not sure what happened..
