Biggest mess in the kitchen! Couldn't get them out of the pan. Batter so thick I wondered if an ingredient was left out of the printed recipe. I am an experienced cook and try all kinds of recipes from the Food Network so this was not my first rodeo. What few I managed to salvage tasted good, but I won't be trying them again.

very good! the first time i made these they came out fine. the second time i made them they would not come out of the pan the edges where over done and the middle was undercooked, i think i filled the pans to full. you can also use small cake pans instead of the mini cup cake pans it makes a great easy batter for anything

These minis are spectacular with their fresh lemon flavor, perfect for a gathering and each time I serve them, I'm asked for the recipe. You must follow the directions to spraying the tins and filling them halfway. The batter is supposed to be thick/velvety and the little depression on the top is great for the glaze to pool in. The glaze just adds to the wonderful lemon flavor. These are very easy to make, glaze, and I never use paper cups. Super easy!!

I really wanted these to work but, they would not come out of the pan sdoooooooo I tried with a liner and they fell after taking these out of the oven. They sounded great but a bit of a disaster. Paula please try different ingredients they were soooo thick of a batter. No rating not worth trying.

awesome! i've made these a few times now, the key to keeping them from sticking is to spray your pan down like Paula does in the video... and they'll slide right out after you pull them out of the oven! and for sure don't overfill the pan, otherwise they will get an awkward muffin-like top and edge to them... these are super easy and guaranteed always a crowd pleaser!

Wonderful! I used paper mini muffin liners b/c of the reviews that said the cupcakes stick to the tins. My first batch turned out a big ugly b/c I overfilled the batter (didn't read the directions well. Though I enjoyed eating the rejects. The second batch in which I only filled the tins half way came out much more pretty. I made these for a potluck dinner and got rave reviews!!

Made these this weekend and it was a hit!!! Next time, I probably wouldn't flavor the icing b/c it's a bit strong on the lemon flavor.

We were invited to a Memorial Day cookout and since I had the ingredients, I gave it a try. These mini muffins came out P-E-R-F-E-C-T-L-Y. I used 2 Wilton mini-muffin tins, sprayed with store brand cooking spray.....they popped right out like a dream. I used a tablespoon cookie [ice cream] scoop which also worked well for these......just the right amount. I do agree with the lower center aspect of the muffins, which hold puddles of the glaze, no problem. I just dipped the muffin bottoms in the glaze first, then use the excess glaze on your fingers to glaze the tops as you place them on your racks to drip [ofcourse your hands SHOULD be washed]. Sounds a little wierd but it worked well and took less time/used less glaze. There was enough glaze, I just found this to be a quick/easy way to prevent the puddles on top and get the job done. They were quite yummy, looked pretty, didn't take much time at all, and made lots. My hosts were happy I brought the surprise!

Help: Made these today and while they taste fabulous, they look horrible! I couldn't get them to pop out of the pan and had to dig them out with a spoon. As you can imagine, they look a little rough!

Great!!! YOU MUST Spray pan with non stick spray containing flour. to cut down on mess, I just thuroughly dip the top of the blossoms only and set aside alowing it to drip down the sides. Read a complaint about their blossoms dropping. Slight dropping in the middle is normal. Have fun and print extra recipes because you WILL be asked for it.
