Ingredients

  • 4 eggs, beaten
  • 2/3 cup fresh lemon juice
  • 2 tablespoons sour cream
  • 1/2 cup confectioners' sugar
  • 6 frozen mini tart shells
  • Whipped cream, optional

Directions

Heat the oven to 325 degrees F.

Mix eggs, lemon juice, sour cream, and confectioners' sugar in a large mixing bowl. Spoon mixture into empty frozen tart shells. Bake in oven for 15 to 18 minutes. Top with whipped cream.

    I love how easy this is but I added a lot more sugar then called for. Just keep adding to taste as it's pretty twangy! I also baked my tart shells without the filling for about 6 minutes first. Also, I think this recipe makes 8 tarts perfectly to much mixture for six.

    It's called a lemon tart people, its supposed to be tart! If you want a sweet desert maybe you should try something that doesn't have lemon as one of the main ingredients. This was easy and tasty.
