Ingredients

  • 4 eggs, beaten
  • 2/3 cup fresh lemon juice
  • 2 tablespoons sour cream
  • 1/2 cup confectioners' sugar
  • 6 frozen mini tart shells
  • Whipped cream, optional

Directions

Heat the oven to 325 degrees F.

Mix eggs, lemon juice, sour cream, and confectioners' sugar in a large mixing bowl. Spoon mixture into empty frozen tart shells. Bake in oven for 15 to 18 minutes. Top with whipped cream.

    What a concept!!! As far as I'm concerned, if my lemon tarts aren't TART, then it's a lemon pie. Easy recipe, total crowd... pleaser. Of all the things I've prepared from this site, this one got the most raves. I took some suggestions from the reviews below and added some items from another recipe. Used the pre-pared graham cracker crust pie shell and added blackberries, raspberries and blueberries (w/ a side of cool whip topping). Everyone went back for 3rd and 4th servings.Read more

    Easy, but VERY tart!

    These tarts were certainly easy, I will say that for them. Two problems----Way too tart and the frozen tart shells did not... get done in the amount of time required for baking. I would probably make them again, just use more sugar and bake them longer and they would be OK.Read more

    Tarts were not very sweet--very little sugar (1/2 cup confectioner's sugar) to the amount of lemon juice (2/3 cup). Recipe... said to put filling in frozen tart shells. I thawed mine and they were not done even though I cooked the tarts 5 minutes over the recipe cooking time.Read more
