Great recipe! I modified it, because my kids are not coconut fans. I used about 1/2 cup of peanut butter, only 1 stick of butter, a little corn syrup, and about 3/4 cup of sugar. It was still plenty sweet. I added some chopped honey roasted peanuts to the mix, and topped it with a little chocolate under the final layer of graham crackers. Awesome!

Paula, you mentioned on the show that this is a rich cookie and to serve in small slices -- but I had no idea! It is way too sweet and the icing made it so sweet we couldn't eat it. We are sweet addicts in our family but just can't eat this. So sorry to tell you this as I have all your cookbooks and I'm such a fan of yours.

Had some butter I thawed out for cookies and made these instead! What a hit..I substituted 1 jar of marshmallow creme as I was short on sugar and I sprinkled some toffee on top before the top layer of graham crackers and icing. Thank you Paula!
