    I made this as soon as i saw it on TV. I made them with out the coconut. I also cut the recipe in half just so i could taste it first and it tastes great... it will probably taste better when they are finished cool too.

    When I saw Paula prepare these "cookies" on TV, I knew I'd have to make them, just out of curiosity and loving the ingredients. The no-bake process is so darn simple, and the results are very good. The recipe can be adjusted easily to suit your own personal taste. Fearing it would be too sweet, I cut back on the sugar to 3/4 cup, and instead of a vanilla icing I used a delicious chocolate ganache topping that I happened to have in the pantry, which I warmed in the microwave to loosen and spread over the top layer before refrigerating it overnight. The cookies cut beautifully and looked lovely. I'm a tough judge so they fell just short of excellent, simply because the taste and consistency, although very good, just missed the mark. Had they been truly luscious, I would have given them 5 stars.

    OMG! Thank you Paula for this easy recipe! My sister and I made these today and they came out really good! What i like about these cookies is that no baking is involved! & I could make it it in the morning and it'll be ready by dinner time for desert! :

    I was amazed at how easy this was! I did a cream cheese frosting instead and toasted some coconut flakes to sprinkle on top to give a little hint at what's inside! I'm trying to keep my 15yr old son from devouring the entire pan before my husband comes home!

    Now don't get me wrong, I love Paula and I use quite a few of her recipes but these came out terrible. Maybe it as me but they end up messy, soggy, and waaaaay to sweet...sorry Paula

    Having just moved to the South, I decided to pay "homage" to this area and tried Paula's cookies. What a treat! I followed the recipe exactly and have made them at least four times in the past month. Everyone loves them. A few husbands have insisted on getting the recipe so their wives could make them at home. I do find they taste better after a day or so as the flavors meld and the cracker soften a bit.

    I loved these but I didn't like the frosting, so I left it out. I used glazed pecans. It was a big hit.

    I am busy baking a few items to help my Mother prepare for hunting camp in a few days. I found this recipe and was eager to try it. It is so easy! Only one slight thought was the butter cream kind of put these a tad over the edge for me. I didn't think it quite fit. And maybe just a fit too sweet. Next time I think I will thin it down just a bit to make it more of a glaze or make brown butter glaze like I see in a lot of Paula's recipes. Maple flavoring in the butter cream might just go well too! I know though that the hunters this weekend when searching for a sweet treat will not complain a bit. I plan to add this recipe to my entourage of Holiday recipes. It will fit in perfect and save me time!! THANK YOU, Paula for another FABULOUS recipe!!!
