Just made these this past weekend to take to a friend's annual Chili Cookout. She does huge pots of chili over an open campfire. Such fun! Everyone brings dishes to pass and I took these cookies. They were gone in a couple hours. My husband was so disappointed. He had hoped to take home a few. I even saw one guy running his finger around the empty pan to get the last of the wonderful coconut, pecan filling. I bet I told 6 different women where they could find the recipe.
These were super easy to make and absolutely delicious. I will be making them again and again.

Super easy to make, no baking in the oven. Surprisingly easy to cut once chilled. So delicious! I cant say it enough!

I made these for the first time for a bake sale & was able to double the batch with no problem . The taste reminds me a bit of pecan pie but WAY better. The texture of the filling is that of pecan pie but not as gooey & the mixture of the pecans, crushed graham cracker & the coconut is lovely. The icing seemed really sweet when I tried it as I was making it but once it was put all together, it was a great. The graham cracker bottom & top softened in the chilling process which made it much easier to cut & remove from the pan than I expected. I would consider this more of a "bar" than a cookie. I will def be adding this to my recipe box =

Wow, I love this recipe! I brought it to a family gathering and everyone loved it and wanted the recipe. Now I'm looking for any excuse to make them again! Can't wait to try it with chocolate grahams. Any advice regarding adding the egg to the hot butter? I tried to temper the milk/egg mixture but it didn't work so well. I ended up with some cooked egg whites in the filling, but it was easy enough to spoon out.

I, too, added mini-chocolate chips to the topping just for fun. Probably about a half-cup. The minis are perfect addition. I did have problems with the crust though, thus the minus-one star deduction. The crackers turned to mush which made it difficult to cut. I did follow the filling recipe as written. Only change was to add the chips to the topping. Didn't stop the office crew from vacuuming up the cookies even if they had to spoon it out.

These were really good and much better as the days went by. Make these the day BEFORE you want to eat them. I halved the reciepe and put in a 8 x 8 pan.
The only problem I had was the top layer didn't stay on. Next time, I am leaving off the top graham cracker and will put the icing right on the filling. Cut into small pieces so you can keep going back!

I'm not a fan of cookies but I try this recipe, nothing easy like this. All ingredients I have on-hand, not expensive, no need to bake, just combine everything to come out delicious cookies !!! I don't like sweet and butter, I just use 8 tbps of butter for filling. You can substitute butter spread for less fat. It's yummy too. I'll make this again and bring to any party.

I made these bars after reading the reviews, and my family has determined this one to be a winner! I used chocolate graham crackers instead of regular and it's a great combination with the coconut pecan filling. I had enough graham crackers left over after saving enough for the bottom and top layer that I had nearly 2 cups of crumbs instead of just one. I used a little extra buttermilk (not regular milk to compensate and also added a healthy amount of pecans and cocunut. The filling was sweet but not too much so. And I added a block of cream cheese to the icing after reading the reviews, using buttermilk there also. I think the tang of the buttermilk in combination with the sweet of the powdered sugar for the icing and the granulated sugar for the filling played well off each other. I agree with the other reviewers that this tastes even better after sitting overnight in the refrigerator. The graham crackers get a little soft and absorb some of the filling/icing flavor.
